It’s time to plan a New Year filled with delicious food! You won’t find any crash diets or complicated recipes here. Instead, I believe eating healthy should be delicious, flavorful, and simple. Nourish in the New Year is filled with the plant-based, gluten-free recipes I make and enjoy all the time!

Nourish in the New Year

Happy New Year! I know that every January there’s a lot of hype around dieting, weight loss, and eliminating “bad” foods from your life. That’s not what I’m here for, though! I believe that healthy eating does not have to be binary. Anyone, on any day, can have a healthy eating moment. The more we add those moments to your day, the more attainable and less restrictive nutritious eating becomes. Moving away from an “all or nothing” mentality makes healthy eating so much easier to maintain! You can read more about my approach to healthy eating right here, but basically, I’m all about exploring the delicious foods and recipes we can ADD to your day! Nourish in the New Year is all about adding tasty foods and recipes that will make your new year shine.

Breakfast

There’s nothing better than starting your day with a meal that makes you feel great! These recipes will give you the momentum you need to continue making food that tastes good while being good FOR you. Breakfast kick-starts your metabolism and gives your body energy to think more clearly while preventing overeating later in the day. Plus, it provides an excellent opportunity to consume foods high in vitamins, minerals, disease-fighting antioxidants and heart-healthy fiber (read more about my breakfast philosophy right here!). The best part? A lot of these recipes taste like total indulgences. I’m talking pancakes, muffins, chocolate, and even a cookie recipe…all naturally sweetened and made with plant-based ingredients.

Smoothies

Whenever I get asked about my FAVORITE thing to make, my answer is immediate: smoothies! I love smoothies so much, I even wrote a cookbook full of them. Smoothies are easy to make, portable, delicious, and so versatile. You can adjust them to fit your preferences perfectly, and you can cover up your not-so-favorite ingredients! It’s the perfect way to start your day…or get a snack that’s packed with nutrition.

Snacks

Let’s talk about snacking! I am such a snacker. Having healthy snacks ready to go helps me keep my energy up during the day! It also keeps me out of the “hangry” territory…you know, when you’re so hungry you grab the first thing you can get your hands on and start munching? Not on my watch! These quick and easy snack recipes are family favorites, and I included both salty and sweet options so you can have some variety.

Salads

Salads get such a bad rap! A sad bowl of iceberg lettuce with a cherry tomato and a drizzle of oil and vinegar? No thank you! When prepared well, salads are filling, flavorful, and even exciting to eat. My favorite recipes have a perfect balance of savory and sweet flavor with crunchy and chewy textures, always topped with a homemade dressing. These salads are so good, you’ll actually look forward to eating them!

Sauces & Dips

Sauces and dips are essential to making your meals interesting! I make all of my own dressings, dips, and sauces. It’s easy to do in the blender, and this way, you’re in control of the flavors! Sauces are also one of the best ways to revitalize your leftovers and make them feel exciting again. Fun fact: I usually meal prep around sauces! I’ll pick one or two (or three or four!) that sound good, then plan meals that will pair well.

Soups

Since the New Year falls in January, we definitely needed some cold weather comfort food in this nourishing roundup…and that means soup! I have soup recipes that are creamy even though they’re dairy-free, filled with plant-based protein, and exploding with flavor. Soups are also wonderful for meal-preppers, too! Make them ahead of time and they store in the fridge or freezer until you’re ready to heat and eat. You can also make my No-Waste Instant Pot Veggie Broth to use in these soups!

Pasta

Pasta is one of my go-to dinner options. My kids love it, Bobby and I love it, it’s easy and affordable…what’s not to love? Once I found a few brands of gluten-free pasta that I loved cooking with, I became a total pasta addict! These recipes are all easy enough for a weeknight, so delicious that my kids give them thumbs up, and they’ve all got veggies added in.

Main Dishes

A lot of people worry about main dishes when it comes to plant-based eating! It’s pretty traditional in our society to have meat as the main focus on a dinner table, but you’ll quickly find that there is so much variety to be found in creating filling and satisfying vegan meals with veggies as the star of the show. My favorites are flavorful, spiced to perfection, and they reheat into delicious leftovers for lunch the next day. Dinner is served!

Sides

Sides add color, nutrition, and variety onto your table! They’re also an awesome way to help kids try new foods and explore how tasty vegetables can be. If you’re used to blandly flavored, limp veggies, prepare to preheat the oven and have your mind blown! Roasting your vegetables creates the most enjoyable texture (think a slight crunch on the outside, tender and flavorful inside), and when they’re spiced just right they get even better. I’ve got sides in every color of the rainbow below, and I hope they inspire you to try something new!

Dessert

I absolutely love dessert. I have a total sweet tooth, and I almost never deny myself when I’m craving chocolate! Creating vegan sweets without refined sugar has been one of the highlights of sharing recipes because I get to watch people feel great about eating dessert! If you explore my site you’ll see that I have dozens and dozens of dessert recipes, but here are some of the easiest ones to prepare and enjoy.

Drinks

If you’re hoping to spend a little less at the coffee shop this year, this is your section! I don’t do caffeine (it’s a trigger for my migraines!), but I really enjoy a drink that feels a little extra special. You can add coffee into these latte recipes and enjoy feeling like your own barista, and as a bonus, your name will always be spelled right on the cup! I’ve also included some juices and wellness drinks that we enjoy.
