These Apple Ring Sandwiches are my kid's current summertime obsession! They're sweet, juicy, and so fun to fill with our favorite toppings and ingredients. Almond Butter and hemp seeds in the middle create a nutritious snack or even lunch that's totally filling. You could also spread them with Vanilla Frosting or Chocolate Frosting and a sprinkle of Chocolate Granola for a sweet dessert treat that tastes indulgent!

Back-to-school season is almost here, and even though we've been doing remote learning for over a year now, I'm still brainstorming fun and healthy snack ideas for the house. I stock up on must-haves at my local Sprouts anytime I'm developing a recipe! Their foods keep my learners fueled and full throughout their busiest school days. For this recipe I used crispy, flavorful apples from the produce section, and I love their bulk section for nuts and seeds as I create nut butters and fillings.
All About Apples
An apple a day is always a good idea! Apples are full of powerful disease-fighting nutrients and health benefits! They keep you hydrated, they’re low in calories, fat-free, sodium-free, cholesterol-free, and full of fiber and vitamin C. Vitamin C helps keep your gums and teeth healthy, so they keep the doctor and the dentist away! How to Core an Apple
I use an apple corer to quickly and cleanly remove apple cores. After that, I just slice them! You can play with the thickness of the slices to see what you like best. If you don't have an apple corer, slice the apples whole and then carefully cut or scoop the core pieces out.
How to Keep Apple Slices from Browning
If you want to prep these apple ring sandwiches ahead of time, put one cup of water and one tablespoon of lemon juice in a bowl and soak the slices for a couple minutes. Drain them, make your sandwiches, and pop them in the fridge! The acid in the lemon will keep them from turning brown.
Apple Ring Sandwich Filling Ideas
There are so many ways to make these little sandwiches your own!
- Nut or seed butter + jelly for a traditional flavor! Try my homemade creamy raw almond butter and raspberry chia jam, which are absolutely delicious together.
- For a dessert option, Homemade Vegan Nutella or Chocolate Sweet Potato Frosting with Granola are wonderful together.

For the "sandwich"
- 2 medium sweet red apples (I love Honeycrisp), cored and sliced into ¼ inch rings
- 2 medium Granny Smith apples, cored and sliced into ¼ inch rings
- optional: lemon half to prevent browning (see notes)

Instructions
- Select your fillings and spread 2 tablespoons on one apple ring half. Top with the other apple ring to form a sandwich.
- Add optional garnishes on the outside of the sandwich (or inside if you prefer!). We love to drizzle the fruit dip overtop and sprinkle with cinnamon and granola. Have fun with it, make it your own and experiment with different combinations or with whatever you have on hand.
Notes
Each apple yields about 6 apple ring slices or 3 sandwiches. Usually I prepare one apple (3 sandwiches) per child as a snack.
