Thinly-sliced apples topped with creamy almond butter, granola, shredded coconut, hemp seeds and chocolate make one of our favorite vegan snacks: Easy Apple Nachos! This is a perfect and easy gluten-free after-school snack or afternoon pick-me-up that everyone agrees is delicious.

Are you ready to have your mind blown?! May I introduce...Apple Nachos. This easy recipe is an absolute favorite in my family! The kids go crazy when I make it and it's the first thing they request when they want a snack (or even dessert! It's that good!). A juicy, crispy crunch of apple combined with creamy, nutty almond butter and sweet cinnamon vanilla granola make this totally addictive. The shredded coconut adds some extra sweetness and gives another flavor component to the snack! Chocolate chips are not a requirement but they are definitely fun. You could melt the chocolate and drizzle it on top for even more of a nacho look and feel!
The Best Homemade Granola
You can use any granola your family loves for this recipe, but our favorite is my Easy Homemade Cinnamon Granola recipe! I make this a couple times a week and we grab it all the time for snacks or to eat like cereal. It works great in this Easy Apple Nacho recipe!
Apple Nutrition
An apple a day is always a good idea! This time of year they're crispier and fresher than ever. Apples are full of powerful disease-fighting nutrients and health benefits! They keep you hydrated because of their high water content, they're low in calories, fat-free, sodium-free, cholesterol-free, and full of fiber and vitamin C. Vitamin C helps keep your gums and teeth healthy, so they keep the doctor and the dentist away! If you want to know more, I wrote an article about the health benefits of apples in The Washington Post a couple years ago.
One apple counts as a full serving of fruit, so this recipe gets you halfway to your daily suggested fruit intake. I leave the skin on, since that's the most important part! So many of an apple's nutrients are located in the skin.
For a more filling snack, you could double the amounts of granola, hemp seeds, and almond butter. This will get each slice of your Apple Nachos even more loaded with delicious nutrition!
Allergy-Friendly Snack
This Apple Nacho recipe is raw, vegan, peanut-free, soy-free, gluten-free and refined sugar-free. If you're navigating a nut allergy you can use sunflower seed butter as an easy substitution. I love a snack that everyone at the table can enjoy.
