    Easy Granola Recipe (refined sugar-free + vegan)

    This is the easiest granola recipe ever.  It only requires six nutritious pantry ingredients that you simply stir together before baking in the oven.  After just thirty minutes, out comes absolutely irresistibly delicious and addictive granola.  It is salty, sweet, and perfectly golden brown.  I love to sprinkle it on smoothies, yogurt and chia seed pudding or eat it plain by the handful!  It is also delicious with homemade plant milk and fresh blueberries.  This recipe is vegan, gluten-free and refined sugar-free.

    The Easiest Granola Recipe

    This recipe requires only six simple ingredients and chances are they are most likely items you already have sitting in your pantry.  Sometimes I like to add cinnamon as well, but this basic recipe is just:

    • rolled oats or quick cooking oats
    • almond flour
    • avocado oil
    • maple syrup
    • vanilla extract
    • cinnamon (optional)
    • salt

    That's it!  So simple.  It produces the best texture and is totally addictive.  I cannot get enough of the salty sweet combination.

    To make the granola, just stir the six ingredients together and place on a baking sheet lined with parchment paper.  Then bake for 30 minutes tossing halfway through.  Finally, let it cool off and enjoy!  I store in an airtight container on the counter and sprinkle on my smoothies throughout the week.  It makes them more filling and more delicious.  Plus, it adds whole grains and plant-based protein to the meal.

    What are the health benefits of oats?

    According to the Whole Grains Council, oats are higher in protein and healthful fats and lower in carbohydrates than most other whole grains.  I love to incorporate oats into my diet because they are full of soluble fiber and help me feel fuller longer.

    This oat-based granola recipe is healthy enough to enjoy for breakfast or as a snack anytime of day.  My kids absolutely love it and eat it by the handful.  My husband loves to treat it like cereal and enjoy with homemade almond milk and fresh blueberries.  My favorite way to enjoy it is on top of a creamy frosty smoothie.  It is also delicious stirred in with yogurt or chia seed pudding.

    Description

    This is the easiest granola recipe ever.  It only requires six nutritious pantry ingredients that you simply stir together before baking in the oven.  After just thirty minutes, out comes absolutely irresistibly delicious and addictive granola.  It is salty, sweet, and perfectly golden brown.  I love to sprinkle it on smoothies, yogurt and chia seed pudding or eat it plain by the handful!  It is also delicious with homemade plant milk and fresh blueberries.  This recipe is vegan, gluten-free and refined sugar-free.


    Ingredients

    Scale
    • 3 cups quick cooking oats (certified gluten-free if desired)
    • 1 cup blanched super fine almond flour (not almond meal)
    • ½ cup pure maple syrup
    • ¼ cup avocado oil
    • 1 teaspoon pure vanilla extract
    • ½ teaspoon fine salt
    • ½ teaspoon ground cinnamon

    Instructions

    1. Preheat the oven to 300 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
    2. In a large mixing bowl, combine all ingredients well. Transfer the mixture to the lined baking sheet and spread into an even layer using a spatula.
    3. Bake for 30 minutes tossing halfway through.
    4. Allow the granola to cool completely on the baking sheet before enjoying (at least 15 minutes). Once cooled, granola can be stored in an airtight container for up to two weeks.

    Sometimes I add a handful of unsweetened finely shredded coconut flakes.  You can also mix in dried fruit or refined sugar-free vegan chocolate chips after it comes out of the oven.

    If you do not have avocado oil you can use melted coconut oil.

        Will it taste sweet enough if I use less honey such as 1/4 cup?

          Yes I have done this before although I much prefer 1/3-1/2 cup to get the nice granola clusters and the best texture overall. The liquid sweetener helps bind it together... maybe you could try substituting almond butter? I haven't tried this yet but it could potentially work to balance out the fact that you are reducing the liquid in this recipe.

          I was searching online for gluten free/vegan family meal plans before school starts next month and I was assuming that I wasn't going to find anything that would help me.

          I stumbled upon Elaine's website and I'm sort of shocked I am just finding out about this place online..

          Normally I feel very limited in what I can make and like it takes a large effort to find new things. I was almost overwhelmed at the options that I had in front of me.

          I made the granola first today. When I started I realized I didnt have any oil. She says this recipe is easy and I haven't found making granola to be as easy as I would think it would be and while I could have tried substituting something I didn't want to play around with an easy recipe and ruin it and therfor be afraid to try it again. So I went to Target to get some avocado oil and make the granola.

          Let's just say almost the entire container is gone. My daughter's and I ate it for lunch with almond milk and then I hung out with the granola for about 15 minutes around 3... I guess I need to make a new batch!

      This sounds wonderful and would like to try but my son is allergic to tree nuts as well as peanuts. Is there something else you could substitute for the almond flour?

        I would suggest adding more of the quick cooking oats in place of the almond flour and then increasing the oil and maple syrup by a little. Almond flour doesn't absorb as much as the oats will so you will need the extra liquid. The almond flour adds a nice texture and helps it clump up a bit but I would think the recipe would still work without it. Another option would be brown rice flour but I have not tested this so I cannot guarantee the results.

      I made this last night—so quick, easy, and delicious! My 3.5 year old was previously uninterested in store bought granola but she was excited by the smell as this was baking and after she tried it, she kept coming into the kitchen to “sneak” more.       I have made this so many times that I think there was something wrong with me; and my family . We seriously snacked on it daily . And it was a hit- gone so quick . I have made other granolas and it did not compare . This is your only option !
