This viral TikTok Japanese cheesecake recipe hack is made with just yogurt and cookies. I'll be honest, I was definitely skeptical going in. Two ingredients and no baking seems too good to be true, but it actually is really amazing! Plus, it's both dairy-free and gluten-free.

This trend is all about the simplicity and texture. Thick, creamy yogurt is paired with long, thin biscotti-style cookies that get inserted directly into the yogurt and chilled. As it sits, something kind of magical happens. The yogurt softens the cookies until they become cheesecake crust-like, almost like a no bake crust. At the same time, the cookie infuses the yogurt with just enough sweetness to balance the natural tang.
The result is surprisingly close to a classic cheesecake experience. Creamy, lightly tangy, gently sweet and incredibly satisfying!

Why This Works
The tanginess of yogurt naturally mimics the flavor of cheesecake filling. When you use a thicker yogurt, especially a Greek style or an ultra thick coconut yogurt, the texture gets even closer. It's creamy and rich, with that signature slight tang that makes cheesecake so good.
The cookie plays an equally important role. These are typically neutral and lightly sweet crunchy cookies, similar to a tea cracker or biscotti. As they sit in the yogurt, they soften and almost congeal the mixture around them. The flavor and mouthfeel are spot on for a cheesecake crust.
Disclaimer: It shouldn't be surprising, but the texture, while close, is not quite as set as baked cheesecake. This isn't a dessert I would serve at a dinner party - for that I'd recommend my no-bake cheesecake instead. For a snack though, this hack totally hits the spot!

Everyone seems to be putting their own spin on this trend, which I love. Some people swirl in jam, drizzle nut butters, add protein powder or fresh berries, or mix in chocolate. My version keeps things mostly classic while making it gluten-free, dairy-free, egg-free and refined sugar-free.
This is a healthier, allergy-friendly way to enjoy the trend while still getting that cheesecake vibe!
I tested a few variations and my favorite combination is the Culina bourbon vanilla yogurt with the Simple Mills Cinnamon Sweet Thins. I also loved the unsweetened vanilla yogurt from Cocojune. Both of these yogurts are quite thick and don't have an overpowering coconut flavor, but I give the Culina version the edge because it gives a thicker, more authentic texture.
For the cookie, you could also use other Simple Mills Sweet Thin flavors including their lemon or chocolate which I tested and really enjoyed (both vegan and gluten-free). Everything is linked at the bottom of this post in the recipe card.



How to Make It
After testing a few yogurt-to-cookie ratios, I landed on the exact measurements for the ideal creamy-to-crust balance. Every spoonful will be equally delicious!
It takes about one minute of prep time. You are literally just inserting cookies into yogurt and popping it in the fridge. That's it.
I found that even after just a couple hours in the fridge, it works great. The best time to enjoy this is as an afternoon snack or a late night treat when you want something creamy and comforting but still light. You get the flavor and texture of cheesecake with protein, no baking and zero effort.
It is also meant to be individual-sized. You can make it directly in a single serving yogurt cup, or portion it into a small ramekin if you're using a larger tub of yogurt and want it to feel a little fancier.
Recipe Tips
- Make it simple the first time. Yogurt thickness and cookie brands vary a lot, so try the basic version before adding extras. Then adjust with maple syrup, cinnamon, chocolate, jam or fruit as needed/preferred.
- Fully submerge the cookies. You do not want any part of the cookie sticking up way above the yogurt or it will stay crunchy. Insert them so you can just barely see the top.
- Distribute the cookies evenly. Place several down the center and a couple on the sides. If using a wider bowl, make sure there are enough cookies throughout so every bite has that cheesecake crust texture.

This easy little recipe completely won me over. It is proof that sometimes the simplest ideas really are the best, especially when they give you cheesecake vibes with almost no effort at all!

Ingredients
- ½ cup dairy-free yogurt, thick and creamy (Culina Bourbon Vanilla or Cocojune Organic Unsweetened Vanilla)
- 7 Simple Mills Gluten-Free Sweet Thins (cinnamon)
Optional:
- 1 tablespoon maple syrup, stirred into the yogurt (for added sweetness)
- Garnishes: fresh raspberries, cherries or strawberries
Instructions
- Sweeten the yogurt (optional). If using maple syrup, stir 1 tablespoon maple syrup into ½ cup yogurt until smooth.
- Fill the jar. Use individual portioned containers or spoon the yogurt into a small glass jar.
- Insert the cookies. Gently slide in 7 cinnamon Sweet Thins at a slight angle. Place 5 in the center, close together but with tiny gaps (so you see yogurt between them). Add 2 on the sides. Avoid having any cookies poking straight up.
- Cover and chill. Cover the jar and refrigerate for at least 3-4 hours, ideally overnight for the best "cheesecake" texture.
- Serve. Enjoy chilled. Add cherries, strawberries or raspberries on the side if desired.
Notes
Crust variations: chocolate or lemon Sweet Thins (both are vegan and gluten-free).
Extra crust layer at the bottom: If you are transferring the yogurt to a small glass jar, you can add an extra layer of cheesecake crust by pulsing the cookies a couple of times in a mini food processor (or just roughly crumbling them up by hand) and placing at the bottom of the glass before adding the yogurt.
