This smoothie is super creamy thanks to blanched slivered almonds! It also has plenty of sweetness from the dates, so it honestly tastes like a dessert that you can have for breakfast! I love it when that happens.
The lemon-blueberry combination is perfect for summertime and I know I'll be drinking this smoothie all season long! I take full advantage of this combo and enjoy it in lemon blueberry cookies as well as lemon blueberry muffins.
Smoothies Without Banana
Most smoothie recipes contain bananas, and as a smoothie cookbook author, I hear a lot of people say they want to avoid this! Whether you don't love the taste or you're trying to cut down on sugar, I've got lots of smoothies without banana including this one! I'm actually allergic to bananas and I think the distinct flavor can overpower smoothies.
How to Make Creamy Smoothies
Smoothies are all about texture! I don't eat dairy, so I've found several other ways to make my smoothies creamy as can be. This particular smoothie has blanched slivered almonds, which blend into a perfectly smooth consistency without impacting the flavor - it's absolutely dreamy. I also use frozen riced cauliflower to add a ton of nutrition and even more creamy texture to this smoothie! I promise you don't taste the cauliflower at all, and it gives your smoothie amazing texture.
Don't skip the almond extract in this recipe! It only calls for a tiny bit (just a quarter teaspoon!) and it's such a subtle difference, but it really does take this smoothie up a couple notches.
Lemon Blueberry Smoothie Ingredients
This bright and cheery smoothie is filled with good-for-you ingredients that all blend into the perfect mix for spring or summertime! You'll need:
- Frozen blueberries
- Frozen riced cauliflower
- Plant-based milk (I like oat milk or almond milk!)
- One large, juicy lemon
- Unsalted blanched, slivered almonds (not sliced almonds!)
- Medjool dates (pitted!)
- Almond extract
- Ice cubes

Ingredients
For the Lemon Blueberry Smoothie
- 1 cup frozen blueberries
- ¼ cup frozen riced cauliflower
- 1.5 cups unsweetened, plain oat milk or almond milk (or other neutral tasting plant-based milk
- 1 large juicy lemon, zested and juiced
- ¼ cup raw unsalted blanched slivered almonds (not sliced almonds)
- 4 soft Medjool dates, pitted
- ¼ teaspoon almond extract
- 1 cup crushed ice cubes
Optional Smoothie Boosters
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds
Garnishes (optional)
- lemon slices, lemon zest or lemon peel twist
- fresh or frozen blueberries
- Easy Vegan + Gluten-Free Granola (or try my grain-free granola)
Instructions
- Place frozen blueberries, frozen riced cauliflower, milk, lemon juice and zest, almonds, dates and almond extract in your blender. Add any optional smoothie boosters if desired. Blend until smooth and creamy.
- Add ice and blend again until completely smooth and creamy. Serve immediately. Garnish with fresh or frozen blueberries, lemon slices, zest or peel twists if you are feeling fancy. This smoothie pairs well with my easy granola recipe,
