These simple bites are our new favorite snack! Granola Energy Bites only have a couple ingredients and can be made in just a few minutes. My kids love them even more than I do!
These Granola Energy Bites were one of those late-night creations that just came together perfectly on the first try. I love it when that happens! The best part?! The kids were just as excited about them as I am! Jade even calls these granola cookies. We love them for a grab and go breakfast or yummy snack, and they even work well as pre- or post-workout fuel. My only warning is that they're highly addictive...I will probably be doubling the recipe from now on! I hope you get a chance to make these because they are SO good.
Granola Energy Bite Ingredients
Would you believe there are only FOUR ingredients in these little delights?! They're also all ingredients I regularly have on hand in my pantry! It's just another one of the reasons these because an immediate go-to recipe in our house.
- Granola
- Raw, creamy almond butter - I love making my own, but you can use any kind you keep on hand. Almonds tout tremendous health benefits. Sunflower seed butter would also work well if you're nut-free!
- Maple syrup
- Vegan dark chocolate chips - I love the Hu brand for any recipe that uses chocolate! They have a short, simple ingredient list that's free of unnecessary additions. You can chop them up smaller for mini bits!
My Favorite Granola Recipe
These Granola Energy Bites use my go-to easy granola recipe. I make at least one batch a week because we use it for everything! It's delicious eaten by the handful as a snack, on top of yogurt or ice cream, or with a splash of almond milk as cereal. You'll only need six ingredients and 30 minutes of oven time to make it! If you'd rather not make your own granola, your favorite brand from the store works great as well.
How to Make Granola Energy Bites
Mix and scoop! That's it! I do have a few tips to make them turn out absolutely perfect, though:
- Use a 1.5 tablespoon cookie dough scoop to create perfect cookie dough balls! You should really pack the dough into the scoop.
- Roll the dough between your hands to shape them into balls, bites, or cookies. You can wet your hands if the dough feels sticky.
- Pop them in the freezer! Freeze these energy bites for about 2 hours before enjoying so they're nice and solidified.

Granola Energy Bites

These simple bites are our new favorite snack! Granola Energy Bites only have a couple ingredients and can be made in just a few minutes. My kids love them even more than I do!
Ingredients
- 1 cup granola
- ⅓ cup raw creamy almond butter (or any nut or seed butter)
- 1 tablespoon maple syrup
- 1 tablespoon mini vegan dark chocolate chips (optional)
Instructions
- Line a small cookie sheet with parchment paper. Set aside.
- Combine all ingredients in a mixing bowl until all well incorporated.
- Use a 1.5 tablespoon cookie scoop to portion out the energy bites. Pack the mixture into the cookie scoop well before releasing. Place the balls onto the parchment lined baking sheet. Use your hands to roll and shape into balls.
- Freeze for two hours before enjoying.
- Store leftovers in an airtight container in the freezer for up to 2 months. Enjoy straight from the freezer (allow to thaw slightly at room temperature for 5-10 minutes before enjoying).
Notes
Granola should be fully cooled to room temperature before using in this recipe. Any kind of granola will work. I love using my homemade refined sugar-free, gluten-free, vegan granola. It has a touch of cinnamon and vanilla and the perfect consistency for this recipe.
Be sure to use a jar of nut or seed butter that is runny not hardened. Stir well to incorporate the oils so it isn't too runny. My preference for the best flavor is raw, creamy almond butter but any kind of nut or seed butter should work fine here.
