If you're hoping to hit the trails while keeping your meals plant-based, you've come to the right place! My Gluten-Free Vegan Camping Recipe Roundup has every recipe you need for a delicious, filling, and nourishing time in the outdoors.
Are you camping this summer? I don't go often, but I love time outdoors and recently started wondering which of my recipes would work well at a campsite! Enter the Vegan Camping Recipe Roundup, a collection of Eating by Elaine recipes that can be easily prepped ahead or made over a campfire. These are foods made with nourishing, filling ingredients to replenish you after a day of hiking or playing outdoors!
Vegan Camping Recipe Roundup: Recipes to Prep Ahead
Sandwiches & Hummus
I shared these vegan camping recipe ideas with a friend who camps a lot (thanks, Sparky!) and he said to skip fresh bread for sandwiches (since it often gets smashed!) and make it in a pita! Genius. I love both of these chickpea sandwich fillings, which have lots of plant-based protein, and there's also a hummus recipe that would be perfect for dipping your pitas in as well. Tortilla wraps would also work well here!
Vegan Camping Recipe Roundup Veggie Salads
I really love having a fresh salad on hand when I'm spending time outside. I think all of these salad recipes would travel really well, and you could assemble them in a Mason jar or container and toss them right in the cooler!

- Broccoli Salad with Avocado
- Easy Southwestern Jicama Black Bean Slaw
Pasta & Potato Salads
If you're camping in the summertime with a cooler, I really think a pasta salad would be so refreshing! It's one of those comfort foods that people gravitate towards. These creamy pasta salads are all totally vegan and made with gluten-free pastas!

Quinoa & Rice Salads
Quinoa is an absolute pantry staple for me! It's loaded with fiber and is a good source of folate, magnesium, iron, phosphorous, and many phytochemicals. It also offers important minerals such as calcium, potassium, copper, and zinc. This makes it the perfect base for these meals to take camping!
- One-Pot Sweet & Spiced Quinoa Lentil Salad
- Vegan Mediterranean Quinoa Bowl
- Easy Vegan Mexican Quinoa
- Vegan Mediterranean Quinoa Salad
- Brown Rice Black Bean Salad with Mango & Avocado
Muffins
Muffins are such a perfect camping breakfast! My muffin recipes are all vegan, gluten-free, and made without refined sugar. They're also so delicious that they'll be perfect for eating while you watch the sun rise!
Bites
I could honestly include ALL of my energy bite and ball recipes in this Vegan Camping Recipe Roundup! Energy bites are perfect for a vegan camping roundup because they can be prepped ahead, they're easy to eat on the go, and they're full of delicious nutrition.
- No-Bake Date Coconut Energy Bites
- Almond Butter & Jelly Energy Bites
- Chocolate Chip Cookie Dough Energy Bites

Granola Recipes
We make granola every week...sometimes multiple times a week! My Easy Granola Recipe is a great one to package up in baggies and bring with you for snacking or breakfast, and the bars are even easier to grab and go.
Oatmeal Cookies
Oatmeal cookies are a really filling sweet treat that would be so perfect after a day outdoors! These two are my favorites, and I love that the cranberries give the first one a bit of a trail mix feel.
Vegan Camping Recipe Roundup: Make Over a Campfire
These are recipes that only need a pot/skillet or a grill to have a hot meal on your plate! You won't need any kitchen equipment (oven, food processor, etc.) for these Vegan Camping Recipe Roundup favorites. Just do a bit of prep ahead of time, bring everything with you, and cook it over an open flame. Yum!
- Easy Moroccan Chickpeas
- Spanish Rice and Beans
- Vegan Pumpkin Chili
- Quinoa Minestrone Soup
- Rainbow Veggie Kebabs with Chimichurri Sauce
- Easy Cast Iron Skillet Pizza Crust
- Vegan Sweet Potato Quinoa Tots
- Easy Creamy Refried Beans
Pasta
You could cook the pasta ahead of time and heat it up with grilled veggies, or make everything over the campfire with a pot and water! Pasta is great because it's lightweight but also super filling, so it's a perfect camping dish.
Burgers
There HAD to be burgers in my Vegan Camping Recipe Roundup! I would suggest making the burger patties ahead of time, and then wrapping and storing them in the cooler until you're ready to grill. Just like with the sandwiches, you may opt to do pitas instead of buns since the buns can get smashed easily.
