The Perfect Veggie Burger
Is everyone else going a little grill crazy right now? Whenever I sit down to meal plan, my mind goes straight to dishes I can grill. This California Avocado Veggie Burger is a recent favorite. I got major flavor inspiration from classic guacamole recipes, so there's red onion, jalapeno, and cilantro to add full and robust flavor to the avocado. Oats, black beans, and (gluten-free!) homemade (easy) bread crumbs give this burger that perfect texture that holds up to the grill and satisfies your backyard burger craving!
Allergy-Free Veggie Burgers
These California Avocado Veggie Burgers are 100% vegan, gluten-free, peanut-free, soy-free and refined sugar-free. ALL of their amazing flavor comes from California avocados, red onions, cilantro, and jalapeno. It's an incredibly straightforward ingredient list that will fill you with plant-based protein, healthy fats and a hearty texture. I just know you'll love it!
California Avocado Veggie Burgers for the Whole Family!
I personally think homemade veggie burgers taste a thousand times better than store-bought frozen options. You know exactly what you're mixing into your meal, plus you can tailor the flavors to your own taste preferences! If you're serving these burgers to little ones (which I totally recommend; this recipe is kid-approved!) then you may want to use less jalapeno.
For toppings, I recommend your favorite hamburger bun or wrap it in butter lettuce, and then the classics: lettuce, tomato, red onion slices, and a little more California avocado! You can never go wrong with more avocado.
All About Black Beans
I love using black beans in veggie burgers. Black beans are considered a legume and part of both the protein and vegetable group. They provide plant-based protein, dietary fiber as well as important nutrients such as iron and zinc. Their texture is perfect for veggie burgers when mashed! They also absorb flavor well.

Description
California Avocado Veggie Burgers are a summertime must-have. They've got a hearty, grillable texture that gets two thumbs up from everyone who tries them! Jalapeno, cilantro, and red onion give a just-right California flavor that you won't believe. It's going to become your new favorite veggie burger recipe!
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 cup diced red onion
- 1 jalapeno, stem removed, seeded and diced
- ½ California avocado, mashed
- 1 (15 ounce) can black beans, drained, rinsed, dried and mashed
- ¾ cup gluten-free rolled old fashioned oats
- 1 cup fresh cilantro, large stems removed
- 1 cup homemade gluten-free panko breadcrumbs
- 1 teaspoon fine salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
Topping Ideas:
- California avocado slices
- tomato slices
- lettuce
- red onion slices
- homemade avocado cilantro jalapeno lime sauce
Instructions
- Heat a cast iron skillet over medium heat. Add oil, onions, jalapeno and a pinch of salt. Saute on medium heat until onions are fragrant, translucent and soft (about 7 minutes). Set aside.
- In a large mixing bowl combine mashed avocado with the black beans and use a potato masher to mash the black beans. It is okay if some beans are partially mashed for texture. Set aside.
- In a food processor, process the oats until it becomes oat flour. Add cilantro and process until well combined. Mix the oats and cilantro to the avocado and black bean bowl.
- Add the onions and jalapeno to the mixing bowl, then the breadcrumbs, salt, pepper and garlic powder to the mixing bowl too. Combine everything well using a spoon. Divide the mixture into 4-6 even portions depending on how thick and large you like your veggie burger. When I divide the mixture into 4 portions I can make the patties about 3 inches in diameter and 1 inch thick.
- To cook the patties you can either use the stovetop or the grill. If using the stovetop, heat the same cast iron skillet that you used for the onions and jalapeno. Bring to medium heat and add 2 tablespoons of extra virgin olive oil. Once hot, add the patties and allow them to sear for about 5 minutes per side until a crispy golden brown crust forms on the outside. If using the grill, bring the grill to high heat and lightly brush the veggie burgers with olive oil. Grill each side for 10 minutes with the grill closed. Carefully and gently flip the burgers using a spatula.
- Once the veggie burgers are cooked you can enjoy on their own or put on a bun with your favorite burger toppings such as California avocado, lettuce, tomato and red onion.

Can these be frozen?
Elaine Gordon says
I have not tested it yet but I would think so. I would recommend wrapping them tightly individually and then placing them in an airtight container in the freezer for up to three months. You can probably defrost in the refrigerator overnight. If you give it a try please let me know how it goes for you!
Tracey Hudson says
Hello,
Can additional oat flour or maybe coconut flour be used as a substitute for the breadcrumbs to make it nut-free?
Elaine Gordon says
Yes! I think oat flour would be best but either could work... coconut flour could impact the flavor and it is sometimes tough to figure out the amount since it continues to absorb moisture as it sits. Please let me know what you end up using and how it goes for you!
