So many vegan treats! 2020 was a crazy year, and I was so curious to see which recipes you loved the most over these last 12 months. Here are the Top 10 Vegan Recipes from Eating by Elaine in 2020! Maybe you’ll even find a new favorite of your own. Thanks for reading (and cooking!) along this year!
I love to end the year by looking back at which posts got the most love in 2020! It was really interesting to see the recipes YOU enjoyed, made, shared, and saved. Some of them surprised me, and some were favorites of mine, too! The main thing I learned? My readers have a MAJOR sweet tooth, which makes you my kind of people! Let’s take a look at the Top 10 Vegan Recipes that everyone craved this year…
Everyone loves this Dole Whip recipe! Maybe it was because you were missing Disney World this year, but Dole Whip was the most-loved 2020 recipe on my site!
Ooh, do I love a Shawarma Bowl! This one is full of delicious flavor and has become a weeknight go-to in our house. The best bonus: the leftovers make the most delicious lunch EVER. I look forward to it all morning! It’s the only savory dish in the Top 10 Vegan Recipes, but it’s good enough to stand alone amongst the sweets.
This is for sure one of my top faves from 2020, so I was thrilled it got love from you, too! It’s a Blender Vegan Vanilla Ice Cream–no ice cream machine needed! Everyone who tries it agrees they cannot believe this is a vegan ice cream with vegetables snuck in.
I was initially unsure if anyone would believe they could make fluffy, delicious cupcakes and frosting with sweet potatoes…but this sweet treat cruised into a Top 10 Vegan Recipes spot and proved you can have both dessert AND a serving of sweet potatoes!
Dalgona coffee totally had a viral moment this year, and I had so much fun creating a matcha version of the whipped drink! This version is naturally sweetened, super easy to make, and fluffy, rich, and creamy. It’s the only drink in the top 10 vegan recipes, and it’s a good one!
Buying good granola in the store can be pricey, and most people don’t realize that it’s SO EASY to make your own. You can totally customize the ingredients and add-ins and within minutes you have a fresh batch. We make this Easy Granola at least once a week in my house!
Every single bite of these muffins tastes just like summertime. Everyone loved these in the warmer months, and I think they’d be just as delicious in the winter when you need a bit of sunshine! My Lemon Blueberry Muffins are made without gluten or refined sugar and they’re totally vegan.
This recipe just might be in the top 10 vegan recipes because of how much kids love it! This is a must for rainy and snowy days, and if you top it off with a little coconut whipped cream and some chocolate shavings or vegan marshmallows your kids will lose their minds in excitement. It’s the BEST Vegan Hot Chocolate I’ve ever had! And it is SO simple to whip up in a couple minutes in your blender.
If any year called for a Cookie Cake, it was definitely 2020! This is for sure a Top 10 Vegan Recipe from the year! This is such a fun treat for birthdays, holidays, or weekdays that need a sweet pick-me-up. You totally have my permission to add as many chocolate chips as your heart desires. You’ve earned it 😉
Lemon Bars! Is there any other dessert more sunshiney and classic? My vegan version is the perfect balance of tangy and sweet, soft and delicious. These would be an absolute hit at potlucks, BBQs, baby showers, or just as a dessert made for your loved ones.
