Description

These simple bites are our new favorite snack! Granola Energy Bites only have a couple ingredients and can be made in just a few minutes. My kids love them even more than I do!


Ingredients

Scale
  • 1 cup granola
  • 1/3 cup raw creamy almond butter (or any nut or seed butter)
  • 1 tablespoon maple syrup
  • 1 tablespoon mini vegan dark chocolate chips (optional)

Instructions

  1. Line a small cookie sheet with parchment paper.  Set aside.
  2. Combine all ingredients in a mixing bowl until all well incorporated.
  3. Use a 1.5 tablespoon cookie scoop to portion out the energy bites.  Pack the mixture into the cookie scoop well before releasing.  Place the balls onto the parchment lined baking sheet.  Use your hands to roll and shape into balls.
  4. Freeze for two hours before enjoying.  
  5. Store leftovers in an airtight container in the freezer for up to 2 months.  Enjoy straight from the freezer (allow to thaw slightly at room temperature for 5-10 minutes before enjoying).  

Notes

Granola should be fully cooled to room temperature before using in this recipe.  Any kind of granola will work.  I love using my homemade refined sugar-free, gluten-free, vegan granola.  It has a touch of cinnamon and vanilla and the perfect consistency for this recipe.

Be sure to use a jar of nut or seed butter that is runny not hardened.  Stir well to incorporate the oils so it isn't too runny.  My preference for the best flavor is raw, creamy almond butter but any kind of nut or seed butter should work fine here.
