Gluten-Free Pumpkin Hummus Toast
It's pumpkin season, after all! I had to have a Halloween toast with pumpkin in it. This one is really simple to make: just use a pumpkin cookie cutter to cut out a pumpkin, spread a full slice of bread with Garlic Pumpkin Hummus, and place the pumpkin-hole slice overtop! Of course, we aren't wasting any bread here, so I like to keep the pumpkin-shaped cutout and spread that with hummus, too. A little piece of crust makes the perfect stem! You could also make this recipe with my Maple Roasted Butternut Squash Hummus or Roasted Sweet Pepper Hummus.

Gluten-Free Pumpkin Hummus Toast
Description
This Gluten-Free Pumpkin Hummus Toast is such a fun snack to make or pack in a lunchbox! We even use every part of the bread to avoid any waste.
Ingredients
- 2 slices whole wheat bread (gluten-free if desired*)
- pumpkin hummus (or maple roasted butternut squash hummus)
- red, yellow and orange bell peppers, stem and seeds removed, thinly sliced into short segments (to fit the leaf)
Instructions
- Use a pumpkin shaped cookie cutter to cut a pumpkin and/or leaf images out of one slice of bread.
- Spread hummus overtop the other slice and place the bread with the cutout hole overtop. This way you don't waste any bread.
- For the pumpkin that was cut out, spread pumpkin hummus overtop. For the stem use a tiny piece of the bread's crust. For the leaves, decorate with hummus and sliced bell pepper.
