This Gluten-Free Pumpkin Hummus Toast is such a fun snack to make or pack in a lunchbox! We even use every part of the bread to avoid any waste.
Gluten-Free Pumpkin Hummus Toast
It's pumpkin season, after all! I had to have a Halloween toast with pumpkin in it. This one is really simple to make: just use a pumpkin cookie cutter to cut out a pumpkin, spread a full slice of bread with Garlic Pumpkin Hummus, and place the pumpkin-hole slice overtop! Of course, we aren't wasting any bread here, so I like to keep the pumpkin-shaped cutout and spread that with hummus, too. A little piece of crust makes the perfect stem!
You could also make this recipe with my Maple Roasted Butternut Squash Hummus or Roasted Sweet Pepper Hummus (I love chickpeas!).
