Whip up a virgin piña colada instantly with just two ingredients: frozen pineapple and coconut milk! You'll be sipping on tropical island vibes made from fresh, whole ingredients all summer. Feel free to take it to the next level with pineapple juice, a pinch of salt, lime juice and maple syrup, but the two key ingredients alone definitely do the trick!
Piña coladas are one of the most iconic tropical drinks. They're refreshing and sweet, perfect for sipping poolside on hot summer days. I've always loved this classic cocktail, and even though I don't drink alcohol anymore I still crave its taste and vibes, especially when on summer vacation.
The idea for this recipe came to me after my husband recently bought a piña colada mix for entertaining some friends. I looked at the bottle and the ingredients were... a little surprising. Sure, I expected sugar and pineapple juice from concentrate, but the label also listed things like titanium dioxide, polysorbate 60 and multiple preservatives - not exactly natural and definitely not something I'd drink!
I set out to not only improve my husband's cocktail game, but also to allow for me (and the entire family) to join in on the fun. Knowing that the two key flavors of a classic piña colada are pineapple and coconut, I started with just those two ingredients.
I learned that frozen pineapple and coconut milk are really all you need for a basic non-alcoholic piña colada. It's creamy and has the authentic coconut flavors you'd expect. It's basically like a smoothie, similar to this mango pineapple one!
For a more sophisticated version to more accurately mirror a traditional piña colada, you can add pineapple juice, lime juice, a pinch of salt and a little maple syrup. Either way you'll be taken to a tropical beach with this special treat!
Why You'll Love this Healthy Piña Colada Mocktail
- Creamy and frosty
- Tropical flavor
- Quick and easy
- Made from just 2 simple ingredients - no corn syrup, simple syrup or artificial ingredients
- Perfect for summer BBQs or any hot day
- Can easily add rum for an alcoholic version
- Kid-friendly so the whole family can get in on the fun!
Ingredients
All you need for this refreshing drink are:
- Frozen pineapple chunks (unsweetened) - frozen pineapple is not only more convenient, but it also makes the drink frosty without the need for ice.
- Full-fat unsweetened coconut milk - make sure to shake the can of coconut milk well before using. It is best if opened at room temperature so the cream doesn't separate.
Optional ingredients
- Fresh pineapple juice - for more pineapple flavor
- Lime - both the lime juice and lime zest (for tang)
- Maple syrup - for added sweetness
- Pinch of salt - to bring out the flavors as coconut milk has no salt

How to Make a Virgin Piña Colada
1. Add ingredients to a high-speed blender and blend until perfectly smooth and creamy.
2. Taste and adjust flavors as needed.
3. Garnish with a maraschino cherry, paper drink umbrella, bamboo straw, fresh pineapple wedge, pineapple leaf, and/or coconut whipped cream. Serve immediately.
*To make it boozy, add 3 ounces of white rum to the blended drink and blend again.
Recipe Tips
Refresh the drink with frozen pineapple rather than ice. If you have extra in the blender that you don't serve right away, it will get warm and melty. Try to avoid adding ice cubes as doing so will water it down. Instead, add more frozen pineapple to chill it and keep it frosty!
Make it festive. The saying that we eat with our eyes applies to mocktails too! Garnishing with festive drink umbrellas or serving in these fun hurricane glasses creates a chill, tropical experience for true summertime relaxation.
Nutritional Benefits
I hope I'm not alone in wanting my piña colada mocktail recipe to be nutritious too!
Pineapples are rich in vitamin C, which is important for repairing body tissue, supporting the immune system and helping with iron absorption. They are also a good source of manganese, helping with blood clotting and metabolism.
Coconut milk is also rich in manganese while also being a good source of magnesium, phosphorus and iron. And while it does contain fat (which we need in this drink for the creaminess), the National Institutes of Health found that it is a healthful source of saturated fats which provide pherols and antioxidants as well (source).
