This refreshing tropical smoothie consists of just three ingredients: frozen mango, frozen pineapple and coconut milk. That's seriously it! The result is a healthy mango pinapple smoothie that's ready in under 5 minutes, perfect for a quick breakfast or afternoon snack! Naturally vegan and dairy-free.
With the weather getting warmer, I am absolutely obsessed with this unbelievably creamy smoothie! I made it for my kids the other day and they said it tastes like ice cream, which is pretty amazing given it used just three ingredients and took less than 5 minutes to make.
The key to getting this smoothie so creamy is simply to not use ice. The frozen fruit and coconut cream will naturally blend into a luscious texture that doesn't need any ice cubes to water it down or thin it out.
And the taste is just as impressive as the texture! Pineapples, mangoes and coconut milk are all naturally sweet by themselves, and when combined you'll enjoy tropical flavors that remind me of a piña colada (without the rum of course, but you could certainly spike it if you wish and add a cherry on top!).
This easy recipe will definitely be one of my go-to smoothies this summer. It's almost too good to be true!
Health Benefits of this Smoothie
Healthy eating has always been a passion of mine given my background in public health, so I absolutely love the nutritional makeup of this fruity smoothie!
Mango
Mangoes offer fiber, potassium, vitamin A and vitamin C, which together boost immunity, reduce risk of many chronic diseases and improve heart health.
Pineapple
Like mangoes, pineapples are high in vitamin C, which boosts the immune system and helps with iron absorption. Pineapples are also high in manganese, which helps with blood clotting and the body's metabolism among other functions.
Coconut Milk
According to the National Institutes of Health (NIH), the saturated fatty acid chains found in coconut milk are shorter than those found in beef and should not be considered the same because they are absorbed differently (source). In fact, it has been found that coconuts provide a healthful source of saturated fats which provide pherols and antioxidants as well (source).
How to Make a Mango Pineapple Smoothie
To make this smoothie, you'll need just three simple ingredients:
- frozen mango chunks
- frozen pineapple chunks
- coconut milk
Add 1 cup each of the frozen chunks to a high-speed blender along with 1 cup from a can of coconut milk. You'll want to shake the can before opening to incorporate the coconut cream with the coconut water.
Blend until perfectly smooth and you're done! Serve immediately.
If your blender has trouble processing the frozen chunks, let them thaw for a bit at room temperature and try again. Or, use a tamper to push the frozen fruit into the blades.
Recipe Tip
Be careful not to overblend! Blending for too long may cause the smoothie to become warm or give it a thinner consistency. Pay attention while blending and stop when you see a smooth, thick and creamy texture.
Optional Add-Ins and Boosters
- A pinch of salt will bring out the flavors more since the coconut milk contains no salt
- Lime juice and/or lime zest will add a little tang and give a more tropical feel
- Chia seeds, hemp seeds and/or protein powder can be added for a boost of protein
- A handful of fresh spinach adds some greens without the taste
- Medjool dates or a tablespoon of maple syrup will provide even more sweetness (the smoothie will be naturally sweet on its own already so I don't see the need for any added sugar)
Substitutions or Variations
Fresh fruit: For a super creamy mango pineapple smoothie, I would not recommend replacing the frozen chunks with fresh mango or fresh pineapple. Doing so will still give you the same fruity flavors, but the consistency will be completely different, more like a juice. You will need to add ice to the blender and the smoothie will not be as creamy.
Plant-based milk: The healthy fats from the coconut milk play a huge role in the creaminess of this smoothie, plus the coconut milk is what gives you that tropical island feel. If replaced with almond milk or oat milk, it will still taste delicious but will be a totally different smoothie!
