- 1 cup full-fat unsweetened coconut milk - at room temperature (shake can well before using)
Optional Ingredients

- pinch of salt
- 1 tablespoon maple syrup
- 1 lime, zested and juiced
Instructions
- Add ingredients to a blender and blend until perfectly smooth and creamy.
- Taste and adjust flavors as needed.
- Garnish with maraschino cherries, paper umbrella straws, pineapple wedges and leaves and/or coconut whipped cream. Serve immediately.

Notes
To make it boozy, add 3 ounces of white rum and blend again.
Refresh the drink with frozen pineapple rather than ice. If you have extra in the blender that you don't serve right away, it will get warm and melty. Try to avoid adding ice cubes as doing so will water it down. Instead, add more frozen pineapple to chill it and keep it frosty!
