It reboots the system and literally makes me feel like I'm glowing from the inside out. It more than quenches my thirst and provides loads of beneficial nutrients.
I find that cucumbers and parsley help to "de-bloat" me and that pineapple really aids in my digestion, so why not put them all together in one drink? I'm telling you, this smoothie just makes your body feel clean and happy while also tasting tropical and fresh!
Flavorwise, this refreshing drink is so yummy. The crisp, cool flavor of the cucumbers combined with the sweet pineapple pairs perfectly and makes me feel alert and awake. You end up not tasting any spinach and you don't need to add anything to sweeten it since the pineapple is so flavorful and bright!

Ingredients
This recipe calls for just 5 ingredients (plus ice). See the recipe card at the bottom of the post for quantities and full instructions.
- Fresh cucumber - I highly recommend using English cucumber because it has thin skin with very mild flavor as well as being essentially seedless. Persian cucumbers are smaller but also have mild flavor and thin skin, so these could work as well in a pinch. I would not recommend any other type of cucumber, as regular cucumbers not only have large seeds but also thick and waxy skin that is tough and more bitter.
- Frozen pineapple - The frozen chunks are what give this delicious smoothie its creamy texture. Plus it's way easier to add store-bought frozen pineapple than to cut up a fresh one!
- Fresh spinach - This leafy green vegetable provides so many vitamins and minerals and is a great addition to this nutrient-packed smoothie!
- Parsley - Fresh parsley adds clean, herby flavor as well as vitamins A, C and K among other nutrients.
- Liquid of choice - Feel free to switch it up! I alternate between water, coconut water, plant-based milk (such as almond milk or oat milk) and green tea depending on what I'm craving.
How to Make this Cucumber Pineapple Smoothie
I use a blender to puree the foods whole. Simply combine all of the ingredients in a high speed blender and blend until completely smooth. Once done, add a cup of ice cubes and blend again in order to serve it chilled.
It's really quick to make, which makes it a favorite for a morning smoothie or healthy snack in the middle of a hectic day.
This recipe is also 100% raw which means all the nutrients (including plenty of fiber!) are there. Your body (and specifically your gut microbiome) will thank you!

I love cucumbers and am always trying to incorporate them into my meals whenever possible. They have a high water content which is why the calorie content is so low. They're hydrating you while adding fresh, bright taste to your day!
A cup of sliced cucumber has about 10 calories in addition to being high in vitamin C. Leave the skin on for the highest dose of nutrients. It blends right in and you won't even notice it.

I use a cup of frozen pineapple in this smoothie. I love that it's high in vitamin C (one serving provides 50% of what you would need in a day). It naturally sweetens the drink and gives a perfect tropical tang that makes your whole cup sing.
Optional Smoothie Additions
I love the simplicity of this pineapple cucumber smoothie recipe but you can definitely add more! All of these below are good options:
Fresh fruit: Honeydew, kiwi, green apples, lemon juice and lime juice are all super refreshing!
Seeds: Chia seeds and hemp seeds are a great way to boost the nutrition even further.
Herbs: Consider fresh mint leaves or fresh ginger in addition to the parsley!

It's the perfect way to wake up in the morning or power through a mid-day slump!
Ingredients
- 1 cup water (or any liquid such as coconut water, plant-based milk or chilled green tea)
- 1 cup frozen unsweetened pineapple chunks
- 1 cup chopped English or Persian cucumber (skin on)
- 3 handfuls fresh baby spinach (or kale with stems)
- 1 handful fresh parsley (or mint) - I usually do a large handful of each - you can include the stems
- optional add-ins: 1 cup celery, 1-inch fresh ginger and 1-2 lemons, juiced (I usually add both and love!)
- 1 cup ice (add after fully blended to chill it)
Instructions
- Blend. Add all ingredients (except the ice) to a high speed blender. Blend from low to high speed until completely smooth. You may need to use your tamper/plunger to get the puree started. Blend for at least one minute on the highest speed to fully incorporate all ingredients.
- Add ice. Add a cup of ice cubes at the end and re-blend briefly to serve it chilled (it will otherwise be warm from blending).
- Serve immediately. If it starts to separate as it sits, simply re-blend to reincorporate the ingredients.

My favorite combination these days is celery, parsley, juice of 2 lemons, kale, Persian cucumbers, frozen unsweetened pineapple, coconut water, water, ice. If you want to make it sweeter add more pineapple.
