This matzo crack Passover dessert recipe is naturally sweetened and so easy to make! It is the perfect addition to any Seder that kids and adults will love. I call it the Passover version of chocolate bark.
What really makes this dessert stand out is the middle layer - a creamy, caramel-like mixture made without butter, refined sugars or cream. Simply melt together almond butter, coconut oil, maple syrup, vanilla extract and salt on the stovetop and pour overtop the matzo crackers. When chilled it tastes just like homemade toffee!
But it can't be called matzo crack without a thin layer of melted chocolate overtop. The chocolate pairs so well with the toffee mixture and adds another element to the delicious matzo crunch.

Ingredients
This original recipe calls uses just a handful of simple ingredients to create delicious matzo candy while keeping it vegan and refined sugar-free! See the recipe card at the bottom of the post for the full recipe.
Matzo: any box of matzo will do. Use gluten-free matzos if desired.
Caramel/toffee layer: raw almond butter (I like the Trader Joe's version best), maple syrup, coconut oil, vanilla extract and salt.
Chocolate layer: vegan chocolate chips (the best part!).
Flaky sea salt (optional): the finishing touch to bring out all the amazing flavors.
How to Make this Matzo Crack
- Place matzo squares on a rimmed baking sheet lined with a sheet of parchment paper. Create a single layer of matzo where they are touching but not overlapping. Break up the matzo to fit if needed to cover the entire pan.
- Prepare the caramel mixture. Microwave coconut oil for one minute to melt. In a medium mixing bowl add the almond butter, maple syrup, melted coconut oil, vanilla and salt. Stir until everything is well combined.
- Pour caramel mixture overtop the matzo layer. Spread it out with a rubber spatula into one even layer.
- Place sheet pan into the freezer for 20 minutes to set.
- Melt the chocolate. Microwave the chocolate chips for 2 minutes until smooth and liquid.
- Pour chocolate overtop the caramel layer. Quickly spread the chocolate with a rubber spatula into one even layer.
- Garnish with flaky sea salt on top of the chocolate layer if desired.
- Place sheet pan in the freezer for 10 minutes to allow the chocolate to set.
- Serve! Break into smaller squares for serving. The caramel layer will begin to melt at room temperature after about 30 minutes so return to the freezer if not serving immediately.
Store leftovers in an airtight container in the freezer.
Additional Toppings
I usually only top with some extra sea salt to fully appreciate the flavors of the chocolate and caramel mixture. However, you can definitely make it your own by adding more toppings to all or some of the matzo pieces. Some options include:
- Coconut flakes
- Chopped nuts such as pistachios, walnuts or pecans

- ⅔ cup raw creamy almond butter (I like Trader Joe's the best)
- ⅓ cup pure maple syrup
- ¼ cup melted coconut oil

I actually haven't found an absolute favorite that I would highly recommend. I think any gluten-free matzo crackers will work fine for this recipe since you don't end up tasting it that much with all the toppings 🙂

The yehuda brand gluten free matzah is great! That is what I used and it turned out great.
I used to make the classic version with butter and sugar, but this is just as good and so much healthier.
The almond butter caramel sauce is so good I’m considering making it separate to eat throughout the year!

What can you use instead of coconut oil? Avocado oil?

You can use vegan butter instead of coconut oil. Avocado oil won't work because you need a dat that is solid at room temperature. I hope this helps! Happy early Passover!
