This is a no-fuss recipe and couldn’t be easier to make. The base of this recipe is the humble but super nutritious green cabbage which is then spiralized into thin strands.
Then comes the most important part of this recipe - the fresh and punchy garlic cilantro lime sauce! It packs in so much flavor and takes a simple coleslaw to a whole new level.
How do I store my coleslaw?
Cabbage is in season year-round. You want to look for green cabbage heads that are well-formed, smooth and have compact leaves. The head of cabbage should feel heavy for its size. This gives you the best results when spiralizing as a compact cabbage spiralizes much more easily.
This is a vegetable you can definitely buy ahead of time to keep on hand. It can be refrigerated in your crisper for up to seven days. Keep it wrapped in plastic if it is sold that way in the store and it will stay even fresher.
You can store your coleslaw for lunches throughout the week. It can last for up to five days. Storing coleslaw in the refrigerator allows the flavors to infuse and actually improves the taste of the coleslaw.
How to spiralize cabbage?
Spiralizing cabbage is the easiest way to get perfectly thin cabbage strips in the shortest amount of time. It literally takes seconds to turn a full head of cabbage into delicate strands exactly right for use in a coleslaw recipe.
I use my trusted Inspiralizer (affiliate link) to make angel hair-thin strands of cabbage to use for this no mayo coleslaw recipe. I like the thinner strands of cabbage for my coleslaw as it holds the sauce better. The thinnest cabbage strips can be made using blade C or D. The cabbage can catch sometimes on these finer settings but the extra effort is well worth it.
For the easiest option use blade A which produces thicker strands. Feel free to use whichever blade you prefer for your coleslaw!

Ingredients
- ½ large head green cabbage
- Creamy garlic lime cilantro sauce
Optional Garnishes:
- sliced green onions
- lime slices
- freshly chopped cilantro leaves
Instructions
- Spiralize ½ a large head of green cabbage on blade C or D of your Inspiralizer.
- Pour ¼ cup of creamy garlic lime cilantro sauce over and mix well. If you like more sauce you can add up to another ¼ cup of sauce.
- If desired, garnish with green onions, lime slices, and freshly chopped cilantro leaves.
