If you have been following my blog for a while you know I'm all about speedy, nutritious recipes. Recipes are even better when you can quickly prep them the night before and magically wake up to a delicious and healthful meal the next day. I love to meal prep whenever I have time. It is efficient and I'm always so grateful later when life gets busy and I need a meal in a hurry.
Whenever I prepare an overnight breakfast I know my future morning-self will thank me. And when I reach into the fridge the next morning and see breakfast ready to go I want to give my past-self a pat on the back.
So what does preparing breakfast the night before look like for me? Usually it is smoothie jars, overnight oats, muffins, sweet potato breakfast bowls or chia seed pudding. Today, I'm introducing something new: overnight chia seed yogurt parfaits. The night before you simply mix together yogurt, milk and chia seeds. The next morning you will have a creamy, thick pudding that offers healthy fats, fiber and plant-based protein. I top it off with fresh peaches and granola to make it a more complete and filling breakfast. I love to use my Super Seed Granola which you can prepare the night before as well. If you are running low on time you can try my 5-Minute Stovetop Granola (allow time for it to cool/harden).
What makes this recipe so easy and delicious is the yogurt. That is the key here. Typically, chia seed pudding is made by combining chia seeds with milk. With milk, you then have to sweeten and flavor it. With yogurt, you already have the sweetness and flavor taken care of for you. Plus, yogurt makes it extra thick and creamy.
The yogurt I used here is my all-time favorite Silk almond milk yogurt. It has a luxurious creamy texture just like the real deal and it is perfectly sweet. Being allergic to dairy, I've always struggled to find the perfect yogurt alternative. I was beyond thrilled when Silk came out with their almond milk yogurt line. I've tried almost every non-dairy yogurt brand and variety out there and Silk almond milk yogurt is by far my favorite. My kids beg me for it daily and my non-vegan husband loves it too.
I'm not a fan of yogurt tang and this brand definitely doesn't have that. It comes in five yummy flavors. My current obsession is peach but any flavor will work. All flavors are vegan, non-GMO, responsibly produced, carrageenan-free, gluten-free, cholesterol-free and soy-free. And they do not use high fructose corn syrup, artificial colors, flavors or preservatives. Each 5 ounce container contains live active cultures and 5-6 grams of protein. Description
This thick and creamy yogurt chia pudding offers the classic peaches and cream flavor that is perfect for summertime. I pair it with fresh and juicy peaches and crunchy granola to make it more filling.
Ingredients
- 1, 5.3 ounce yogurt container (I used Silk Peach Almond Milk Yogurt)
- ¼ cup almond milk or homemade cashew milk
- 2 tablespoons chia seeds
- 1 peach, cut into chunks
- ⅓ cup homemade granola*
Instructions
- In a medium sized glass lidded jar, whisk together the yogurt, milk and chia seeds. Secure the lid and place in refrigerator to thicken overnight. The chia seeds will become less crunchy and plump up as they absorb the liquid creating a pudding like texture.
- In the morning, remove from refrigerator and place the peaches and granola on top. Enjoy with a spoon.
Notes
Notes: If desired you can press thin peach slices to the glass jar prior to filling it with the chia yogurt mixture (as seen in my photos). This is mostly just for show but is of course edible.
