I don’t know of many recipes that only have ONE ingredient, but I sure love it when it happens! One juicy, perfect watermelon is all you need to make these Easy Watermelon Popsicles that kids and adults both love for summertime. They’re so simple to assemble that little ones can help do it, and they’re so refreshing on a hot summer day that you’ll want them in your freezer at all times!
All About Watermelon
Watermelon is INCREDIBLE for summertime since it’s made mostly (92%!) of water! That means it keeps you hydrated during the hottest months of the year…with the bonus of being so sweet that kids love it. Watermelons contain electrolytes, vitamin A, vitamin B1, vitamin B6, vitamin C, potassium, lycopene, fiber, magnesium and amino acids. They pack in so much nutrition and happen to be the #1 budget friendly fruit.
How to Make Watermelon Popsicles
We blend…and we pour…and that’s about it! Slice your watermelon into cubes with the rind removed, and blend them until it’s totally smooth. I like to start at the lowest speed and then work up if needed!
My Favorite Popsicle Molds
I love these ice pop molds! We use them over and over again all summer long. Once frozen, I run them under warm or hot water for 10 seconds so the watermelon popsicles slide right out. My kids love grabbing a stick and pulling their frozen treat out!
Seedless Watermelon Popsicles
I recommend using a seedless watermelon for this recipe since it allows you to pour the watermelon puree straight into the molds. If you do end up with a seeded watermelon you can pour the watermelon through a strainer, but the popsicles won’t have the same texture since they’ll be made of watermelon juice without the flesh. Still delicious, but I suggest looking for a seedless melon!

- 1 ripe large watermelon, rind removed, cubed (~ 6 cups of cubed watermelon)*
- Place watermelon in a high speed blender and blend from low to highest speed until perfectly smooth (about 20-30 seconds).
- Pour the watermelon juice from the blender into popsicle molds. Freeze for 8 hours or overnight until solid.
- To release the popsicles from their mold, run the popsicle under hot water for 10 seconds. Enjoy!
* You can use a seedless or regular watermelon with black seeds. We usually buy regular watermelon with seeds and blend the seeds right up for added nutrients. It doesn’t impact the flavor or texture at all!
If your watermelon is sweet you don’t need to add any sweetener to it. If it is not you could add 1-2 teaspoons maple syrup to bring out the natural sweet flavor of the watermelon.
For a fun twist, add the zest and juice of 1 lime, 2 teaspoons maple syrup and a handful of fresh mint leaves.
If you have extra strawberries on hand you can add a handful or two of hulled strawberries. Their pair great with watermelon and the color works well here. Pitted cherries also pair nicely with watermelon.
Add coconut cream (from 1 chilled 13.5 ounce can of full fat coconut milk) for a creamy tropical watermelon popsicle.
