This fun and festive summertime dessert is always an easy crowd-pleaser. Sweet and creamy homemade coconut whipped cream tops watermelon slices in the shape of pizza. How fun!? And so simple. I love to decorate the slices with fresh seasonal berries too. This colorful treat is refreshing, healthy and quick to make!

I love how incredibly refreshing and hydrating watermelon is on hot days. Watermelons are 92% water and contain electrolytes, vitamin A, vitamin B1, vitamin B6, vitamin C, potassium, lycopene, fiber, magnesium and amino acids. Here are my favorite watermelon selection tips for the perfectly ripe, sweet and juicy watermelon…
- Pick it up – it should feel heavy for its size (means it is full of water).
- Inspect it – It should be firm, symmetrical and free of bruises, cuts or dents in the rind.
- Look at the underside of the melon – it should have a creamy yellow spot from where it sat on the field and ripened in the sun.
- Sniff it – a sweet aroma means a sweeter melon!
A brilliant red interior indicates a sweet melon.

Description
This easy vegan watermelon pizza recipe is refreshing, sweet and absolutely delicious. It is the perfect simple and nutritious summer dessert and it is entirely plant-based, dairy-free, gluten-free, grain-free and refined sugar-free. Everyone loves this vibrant and festive treat!
Ingredients
- 1 batch of homemade coconut whipped cream
- 1 seedless watermelon, chilled
- 2 cups fresh berries (strawberries, blueberries, raspberries, blackberries), chilled in advance, washed and dried
Instructions
- Make the coconut whipped cream. You can make in advance and store in your refrigerator until it is ready to use. If it hardens too much in the refrigerator then use hand mixers to beat again before spreading onto the watermelon.
- Slice a watermelon crosswise and cut round pieces about one inch thick. These watermelon rounds are the "pizza." I usually can get 4-6 good rounds from a medium sized watermelon. I serve any remaining watermelon separately.
- Cut each watermelon round into 6 triangle slices and top each slice with coconut whipped cream and fresh berries. Enjoy immediately.
