    I'm an absolute smoothie fanatic. I love creating smoothies, testing them, perfecting the recipe, and enjoying the final product! I even wrote a whole cookbook about smoothies. A lot of people think of smoothies as a warm weather food, but I make and love them year-round! This Candy Corn Smoothie is so festive for Halloween and my kids always go crazy for it. They love seeing how the different colors and layers start to merge together as they sip their drink! It is a great way to get immune-boosting nutrients with a total citrus POP this time of year!

    The Secret Ingredient for Creamy Smoothies

    I love to include cauliflower in my smoothies! I keep a big bag of it in the freezer just for this purpose. This may seem like an unexpected choice, but it's a lot like spinach: you don't taste it at all, and it adds amazing nutrients and an incredible creaminess into your smoothie! Cauliflower is low in calories while offering dietary fiber, vitamin C and folic acid. I like to buy frozen riced cauliflower because it blends much easier than frozen cauliflower florets. Be sure to check the label and make sure it doesn't have any added spices. The only ingredient on the label should be cauliflower.

    Orange Smoothie

    The orange layer of this Candy Corn Smoothie is filled with bright fresh orange (the juice and zest)! I love giving my family this boost of vitamin C to help their immune systems, especially in the fall and winter months. Evidence suggests that for some people, high doses of Vitamin C might actually shorten a cold by as much as one and a half days. In addition, vitamin C fights free radicals to prevent or delay certain cancers and heart disease. It is essential for the growth and repair of bodily tissues, helps heal wounds and repairs and maintains healthy cartilage, bones, teeth and skin. Sign me up!

    Carrot Candy Corn Smoothie

    Carrots are naturally a little bit sweet, and when paired with a bit of maple syrup (or dates) and citrus like in this smoothie recipe, they absolutely shine! They also add incredible nutrition since they're low in calories and offer dietary fiber. They’re high in beta-carotene, which your body turns into vitamin A. This is good for eye health but also your immune system as well as healthy skin. They add a beautiful orange hue to this Candy Corn Smoothie too for the orange layer.

    This smoothie is vegan, gluten-free, grain-free, peanut-free, soy-free, paleo-friendly, soy-free, and refined sugar-free! To make it nut-free use any non-dairy milk alternative you prefer (oat, rice, coconut hemp, flax etc.)

    Bring the Halloween spirit into breakfast time with this nutritious, vegan dye-free Candy Corn Smoothie! It's a creamy, citrusy smoothie everyone will love.


    Ingredients

    Scale

    Yellow Layer

    • ¼ cup raw unsalted blanched and slivered almonds (or raw cashews)
    • 1 teaspoon vanilla extract
    • 2 tablespoons maple syrup or 4 soft pitted Medjool dates
    • ½ cup unsweetened almond milk
    • juice and zest of 1 large juicy lemon
    • ½ cup frozen riced cauliflower
    • 1 cup crushed ice cubes 
    • ¼ teaspoon turmeric powder

    Orange Layer

    • ¼ cup unsalted raw blanched and slivered almonds (or raw cashews)
    • 1 teaspoon vanilla extract
    • 2 tablespoons maple syrup or 4 soft pitted Medjool dates
    • ½ cup unsweetened non-dairy milk (I use almond milk typically)
    • 1 navel orange, zested and juiced 
    • 2 tablespoons orange juice (optional for added orange flavor)
    • ½ cup frozen riced cauliflower
    • 1 cup crushed ice cubes
    • ½ cup raw baby carrots (for color and added nutrients)

    White Layer

    • Homemade Coconut Whipped Cream

    Garnish

    • orange and lemon zest or dye-free candy corn if desired. 

    Instructions

    1. Place all yellow layer ingredients in a high speed blender.  Blend until smooth and creamy.  Use your blender's tamper/plunger if needed.  Divide the yellow layer into 3 glasses (filling each glass about halfway full).  Place the glasses in the freezer.
    2. Rinse out the blender.  Place the orange layer ingredients in the blender and blend until smooth and creamy.  Use the blender's tamper/plunger if needed. 
    3. Remove the glasses from the freezer.  Carefully spoon (don't pour) the orange layer on top of the yellow layer) until the glass is almost full. 
    4. Add a couple spoonfuls of coconut whipped cream on top.  Garnish with lemon or orange zest if desired.  Garnish with dye-free candy corn if desired.
