My daughter had a recommendation to carb load before competitions. I think these recipes would be great for that and would also fill my need for more fiber and veggies in my diet. Although I am not vegan, I require a LOT of veggies to feel well, and we live in a food desert for most of the year. We are going to try your ideas.
