Watermelon Avocado Mint Feta Salad (vegan)

This vegan Watermelon Avocado Mint Feta Salad recipe is a favorite for lunch or a summertime evening! The homemade dressing is light yet flavorful and pairs perfectly with the sweet watermelon, creamy avocado, sweet fresh herby mint and salty creamy feta cheese. I also added a bit of thinly sliced red onion for a crisp kick. Together this salad is so refreshing, satisfying and full of summer’s best flavors.

Vegan Watermelon Avocado Feta Mint Salad

This is such a happy, colorful, and bright summer salad! It’s a Watermelon Avocado Mint Feta Salad (with vegan feta cheese, of course!) with the best combination of flavors and texture. It’s become one of our favorite ways to use seasonal produce and it makes just enough for two large bowls of salad or four appetizer salads. Try it, love it, and then enjoy it all summer long!

Homemade Watermelon Avocado Mint Feta Salad Dressing

I make a really simple and flavorful dressing to drizzle over the top of this salad. Making salad dressing at home is as easy as whisking everything together in a bowl, or you could even make it in a mason jar and shake it up! Store it in the refrigerator until you’re ready to pour it over your salad. You’ll just need…

All About Watermelon

I love how refreshing and hydrating watermelon is in the summer heat.  Watermelons are 92% water and contain electrolytes, vitamin A, vitamin B1, vitamin B6, vitamin C, potassium, lycopene, fiber, magnesium and amino acids. They are super nutritious and also happen to be the #1 budget-friendly fruit.

Where to Buy Vegan Feta Cheese

You can find vegan feta cheese in most health food stores that have cheese alternatives! My favorite brand is Violife which I get at Sprouts of Whole Foods, although any of your favorites would work with this salad.

Description

This vegan Watermelon Avocado Mint Feta Salad recipe is a favorite for lunch or a summertime evening! The homemade dressing is light yet flavorful and pairs perfectly with the sweet watermelon, creamy avocado, sweet fresh herby mint and salty creamy feta cheese.  I also added a bit of thinly sliced red onion for a crisp kick.  Together this salad is so refreshing, satisfying and full of summer’s best flavors.

Scale

Ingredients

  • 4 cups diced watermelon (cut into 1/2” cubes)*
  • 1/2 avocado, diced*
  • 1/3 cup thinly sliced red onion
  • 1/4 cup packed fresh mint, minced (plus more for garnish)
  • 1/3 cup vegan feta cheese, diced or crumbled (such as VioLife brand)

Dressing:

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice (~1 lime)
  • 1 teaspoon pure maple syrup
  • 1 garlic clove, minced
  • 1/4 teaspoon fine salt

Instructions

  1. Place watermelon, avocado, red onion, mint and vegan feta cheese into a large mixing bowl.  Set aside.
  2. In a one-cup measuring cup whisk together the dressing ingredients.  Drizzle overtop the watermelon salad and gently toss to evenly coat.
  3. Divide between two large salad plates and serve immediately.  Best served cold.

Notes

  • Make sure your watermelon is ripe, sweet and has a nice crisp (not mushy) texture before serving.  Chill the watermelon whole in advance for best results.
  • Chill the avocado in advance for best results.
  • I prefer avocados in this recipe that are just ripe and not too soft so that they hold up well in the salad when tossed.
  • You can add a sprinkle of hemp seeds or 1-2 tablespoons of toasted pine nuts for added protein.
