    Strawberry Balsamic Dressing

    Summertime produce is my jam.  I love spicing up my ho-hum recipes with unexpected flavors and seasonal ingredients.  Adding strawberries to salad dressing is not only fun and delicious but pumps up your vitamin C content.  This dressing contains 1 cup of fresh strawberries and makes about four servings.

    For me, I always make homemade dressing.  I love knowing what is in my dressing and controlling the sugar and salt content.  With clean ingredients and whole foods you can feel good about what you are pouring on your greens.

    Simple Summer Salad with Strawberry Balsamic Dressing

    And making homemade dressing doesn't have to be difficult or time consuming.  This dressing is so simple and quick.  Just throw all the ingredients in a blender (or even a food processor) and puree until smooth and creamy.  Everyone will love the slightly sweet and tart flavors of this summery dressing.  It works great on salads with fresh fruit.  I'll be posting a recipe soon that features this dressing.  Preview: the salad contains arugula, red onion, peaches, blackberries, quinoa and candied walnuts.  It is literally THE perfect summertime salad.  I'm hooked.

    Description

    A simple, sweet and refreshing dressing that is perfect for summertime. This healthy dressing always impresses.


    Ingredients

    Scale
    • 1 cup fresh strawberries, stems removed
    • ¼ cup balsamic vinegar
    • ¼ cup extra virgin olive oil
    • 1 tablespoon dijon mustard
    • 1 tablespoon raw agave nectar or maple syrup
    • 1 clove garlic
    • ¼ teaspoon fine grain sea salt
    • ¼ teaspoon ground black pepper

    Instructions

    1. Place all ingredients in a blender and puree until smooth and creamy.  Taste and add more salt or pepper if desired.

      Really Delicious dressing. I didn’t have enough strawberries so added blueberries and blackberries. Came out fantastic. I’m on no sugar so I used stevia blend instead if maple sugar Tasted so great!
