This patriotic and healthy smoothie is the perfect way to start your July 4th. The vibrant colors are super festive and will have everyone singing "I'm Proud to Be an American!"
This smoothie is made with frozen riced cauliflower which I love using as a creamy, neutral base in smoothies. It has no flavor and adds great texture. It is perfect for the white layer. You can buy a bag of it in the frozen section of your supermarket and toss into any smoothie really. It is an excellent source of immune-boosting vitamin C and is low in calories. It also offers dietary fiber and folic acid.
I repeated cauliflower in the blue layer and added blue majik powder for a beautiful blue hue. You can also use natural food dye or blue butterfly pea powder. I used frozen strawberries and cherries in the red layer and beet root powder to make it a more vibrant red and less pink. It is naturally sweetened with maple syrup (or you can use Medjool dates). Both are refined sugar-free. And I flavored the layers with sweet vanilla and nutty almond butter. Together these three layers are delicious.
Here are my tricks for making a layered smoothie that doesn't mush together:
- Make the smoothie a bit thicker than you normally would. To do this, use more frozen ingredients than liquid. If your blender is struggling try using your tamper. Or, add more liquid one tablespoon at a time.
- Gently spoon the second and third layer into the glass instead of pouring it directly from the blender. Pouring directly from the blender creates too much force and part of the layer you are pouring will sink to the bottom.
- Pour the first layer into a frozen glass then place that glass in the freezer while you make the second layer. Spoon the second layer into the glass and freeze again while you make the third layer.

This smoothie is free of artificial colors and offers fiber, healthy fats, plant-based protein and antioxidants. It has a sweet vanilla flavor accented with nutty almond. I love the texture too - thick and creamy!
Ingredients
Blue Layer
- 1 ½ cups frozen riced cauliflower
- ½ cup unsweetened, plain plant-based milk (such as oat milk, cashew milk or almond milk)
- 1 tablespoon pure maple syrup (or 2 pitted Medjool dates)
- 1 teaspoon pure vanilla extract
- 1 tablespoon blanched slivered almonds
- 1 tablespoon raw almond butter (I like the Trader Joe's brand)
- 1 teaspoon blue majik powder, blue butterfly pea powder or natural food dye
White Layer
- 1 ½ cups frozen riced cauliflower
- ½ cup unsweetened, plain plant-based milk (such as coconut milk, oat milk, cashew milk or almond milk)
- 1 tablespoon pure maple syrup (or 2 pitted Medjool dates)
- 1 teaspoon pure vanilla extract
- 1 tablespoon blanched slivered almonds
Red Layer
- 1 cup frozen cherries, raspberries or strawberries
- ½ cup unsweetened, plain plant-based milk (such as oat milk, cashew milk or almond milk)
- 1 tablespoon pure maple syrup (or 2 pitted Medjool dates)
- 1 teaspoon pure vanilla extract
- 1 tablespoon blanched slivered almonds
- 1 tablespoon raw almond butter (I like the Trader Joe's brand)
- 1-2 teaspoons beet root powder
Instructions
- Place two glasses in the freezer to chill.
- Blue Layer: Add all blue layer ingredients to a high speed blender and blend until smooth and creamy. If your blender is having difficulty blending try using the tamper. Otherwise, add 1 tablespoon of milk at a time to get it going. Scrape down the sides if needed. You want this layer thick so the layers on top do not sink into it. Taste and adjust sweetness and flavors if desired. Add more blue color if needed. Once blended, divide into two glasses from the freezer. Place the glasses back in the freezer.
- White Layer: Add all white layer ingredients to a high speed blender and blend until smooth and creamy. If your blender is having difficulty blending try using the tamper. Otherwise, add 1 tablespoon of milk at a time to get it going. Scrape down the sides if needed. You want this layer thick so the layer on top do not sink into it. Taste and adjust sweetness and flavors if desired. Once blended, divide into the two glasses from the freezer. To do this, gently spoon the white layer overtop the blue layer. Do not pour it or it may bleed into the blue layer. Place both glasses back in the freezer.
- Red Layer: Add all red layer ingredients to a high speed blender and blend until smooth and creamy. If your blender is having difficulty blending try using the tamper. Otherwise, add 1 tablespoon of milk at a time to get it going. Scrape down the sides if needed. Taste and adjust sweetness and flavors if desired. Add more beet root powder if more red color is needed. Once blended, divide into the two glasses from the freezer. To do this, gently spoon the red layer overtop the white layer. Do not pour it or it may bleed into the white layer.
- Top with fresh blueberries and enjoy immediately.

What is Blue Majik? It is an extract of the freshwater algae, spirulina. Spirulina powder is made from the whole algae plant. The blue pigment comes from photosynthetic compounds in the algae. Blue Majik is sold as a supplement in pill or powder form.
