This refreshing smoothie came from my desire to finally add a carrot based recipe to the blog. I really wanted something light and energizing that hid the carrot flavor while still giving you all the nutrition and color.
Raw carrots can taste a little bitter, especially to kids, so I kept the amount balanced. You can always add an extra carrot if you love stronger carrot flavor, but the base version is very approachable and family friendly. The combination of carrots, clementines and fresh lemon juice loads this smoothie with vitamin A and C, creating a bright and uplifting flavor.

The whole blend is naturally sweetened with dates and made creamy with raw blanched slivered almonds. I love using blanched almonds in smoothies because they add body without changing the flavor (or you can use raw cashews instead). A splash of vanilla complements everything and highlights the sweetness of the dates and gives subtle creamsicle vibes, and a pinch of salt helps the flavors pop. Ice brings it all together and makes the smoothie perfectly frosty without turning overly thick.
This smoothie is great for adults and kids alike. My kids love the bright orange color and cannot taste the carrot at all. If you want to boost it even more, chia seeds add extra nutrients and help keep you full!
How to Make It

Add all of the ingredients to a high speed blender and blend until completely smooth and frosty. That's it!



Recipe Tips
- Peel the carrot and trim the ends for best flavor.
- To adjust the thickness, add more ice to thicken or a splash of almond milk to thin.
- If making the smoothie ahead of time, leave the chia seeds out. They will thicken as the smoothie sits, so add them right before serving.

Ingredients
- 1 large raw carrot, peeled, ends removed chopped (¾ cup chopped)
- 2 large juicy lemons, juiced
- 2 clementines (seedless)
- ¾ cup unsweetened almond milk
- 3 large soft Medjool dates, pitted
- ¼ cup raw blanched slivered almonds (not sliced almonds)
- 1 tablespoon chia seeds (optional)
- 2 cups ice cubes
- ¼ teaspoon pure vanilla extract
- pinch of salt
Instructions
- Add all ingredients to a high speed blender.
- Blend until completely smooth and frosty.
- Taste and adjust as needed. Add more ice to thicken or a splash of almond milk to thin.
- Serve immediately. Enjoy!
