This high-protein chickpea salad is my go-to easy lunch: a can of chickpeas and crunchy, colorful veggies tossed in a creamy lemon herb tahini dressing that takes it way beyond a basic vinaigrette! No cooking required, and it's vegan, gluten-free, and perfect for meal prep!

This is one of those meals I find myself throwing together whenever I don't have anything planned for lunch. It's quick, easy, refreshing, SO flavorful, and it's satisfying!
Garbanzo beans are one of my absolute favorite pantry staples. They're inexpensive and so versatile, and I almost always have a can on hand, which is exactly what makes this recipe so convenient.
But here's the thing: this is not just a bowl of chickpeas and chopped vegetables with a basic dressing. When I was looking at other chickpea salads out there, I noticed that most use a pretty basic olive oil and lemon dressing or a classic vinaigrette. Nothing wrong with that (I've definitely made plenty of those myself!), but I think they're missing such a great opportunity to add more flavor, creaminess, protein, and nutrients.
That's where this creamy lemon herb tahini dressing comes in. Trust me, the sauce is EVERYTHING!
The Secret's in the Dressing
Honestly, I could drink this dressing! It's creamy, bright, lemony, herby, slightly sweet, and so flavorful. It completely transforms an ordinary can of chickpeas into something incredibly creamy, fresh, and satisfying.
If you really want to crave a chickpea salad, this creamy lemon herb garlic tahini sauce is the way to go. It's seriously SO good!
If you already love my lemon herb tahini sauce, this one will feel very familiar. I used a little less garlic and water here and omitted the cilantro.
Ingredient Notes

- Chickpeas: The trick here is to rinse and pat your chickpeas dry. If they're too wet, you'll have a watery salad, and we can't have that!
- The veggies: Crisp cucumber, sweet red bell pepper, juicy cherry tomatoes, and red onion add so much freshness, flavor, texture, and color. Plus a variety of vitamins, minerals, and antioxidants in such a simple meal.
Easy to Customize
This recipe is really flexible based on what you have available. If you don't have cucumber, you can leave it out. Same with the bell pepper! You can use both or just one.
You could also add diced avocado just before serving or mix in some chopped arugula at the last minute. It's very forgiving and doesn't require any complicated ingredients.
How to Make High-Protein Chickpea Salad

This comes together in three quick stages with no cooking involved. Dice the veggies (I like using my food chopper here to make this especially quick and easy), blend the dressing, then toss it all together.

The one technique that matters is pulsing the parsley in at the very end instead of blending it, which is what leaves those visible little flecks of parsley throughout the dressing. Enjoy it right away or chill it until you're ready to serve!
Ways to Serve It
Honestly, I usually just eat it straight out of the bowl because it's that good! But there are so many possibilities:
- Over a bed of fresh arugula or mixed greens
- With chips or gluten-free crackers for scooping
- Stuffed into a gluten-free wrap or pita (or even on toast)
- Tossed with chopped arugula for an even bigger salad

Perfect for Meal Prep and Gatherings
I love that you can make this ahead, store it in the refrigerator, and enjoy it for a few days of easy lunches without any reheating. It's also a wonderful option for picnics, cookouts, potlucks, or any casual gathering. It's colorful, easy to transport, and can be served chilled.
Health Benefits of This Chickpea Salad
As a Master of Public Health (MPH) and Certified Health Education Specialist (MCHES), I love a meal that's as nourishing as it is delicious. Chickpeas are such an easy source of plant-based protein and fiber, and between the chickpeas and the tahini, you're getting protein, fiber, and healthy fats all in one bowl.
Tahini brings so much to the table beyond protein, including calcium, iron, and other minerals. And all those crunchy, colorful veggies add a variety of vitamins, minerals, and antioxidants.
The best part? It never feels like you're eating something just because it's healthy. It's such an enjoyable way to get more protein and vegetables into your day!
I hope you love this High-Protein Chickpea Salad as much as I do! Please leave a comment and rating below or tag me @eatingbyelaine so I can see how you serve it!
