Description

This bright orange carrot smoothie tastes like morning sunshine and not like vegetables, which makes it an instant hit for both kids and adults. It is sweet, creamy and zesty with no noticeable carrot flavor. This is the kind of feel-good, immune-supporting blend you will crave in the morning!


Ingredients

  • 1 large raw carrot, peeled, ends removed chopped (3/4 cup chopped)
  • 2 large juicy lemons, juiced
  • 2 clementines (seedless)
  • 3/4 cup unsweetened almond milk
  • 3 large soft Medjool dates, pitted
  • 1/4 cup raw blanched slivered almonds (not sliced almonds)
  • 1 tablespoon chia seeds (optional)
  • 2 cups ice cubes
  • 1/4 teaspoon pure vanilla extract
  • pinch of salt

Instructions

  1. Add all ingredients to a high speed blender.
  2. Blend until completely smooth and frosty.
  3. Taste and adjust as needed. Add more ice to thicken or a splash of almond milk to thin.
  4. Serve immediately. Enjoy!
