Think of it as a micro-chopped fruit salad that captures all the sweet, tart and rainbow-bright vibes of a pack of Skittles but made entirely from fresh fruit without any artificial dyes or refined sugar!

My family seriously goes crazy for this fruit salad! The colorful presentation is eye-catching, it's super refreshing and the name only adds to the appeal. The tiny fruit pieces ensure you get a variety of fruit in each bite, making it the perfect recipe for a summer gathering, playdate or brunch.
I like to keep the colors separate for a wow-worthy effect, then toss everything together right before serving for a true rainbow explosion.
What really sets this version apart is my spin on the viral recipe with the addition of the micro-chop. I tested several fruit combinations and methods, and found that using a veggie chopper to create evenly diced pieces makes a big difference.

Ingredients

These are the fruits and proportions that worked best for me after multiple rounds of testing. Feel free to make swaps based on what you have on hand, but I'm seriously obsessed with this combo (see recipe card below) because it gets you an even amount of red, orange, yellow, green, blue and purple.
Strawberries, cantaloupe, mango and kiwi all work especially well in the veggie chopper. Just be sure to cut each fruit into slices before putting it through for best results.









Swaps that Work Well
- Red: cherries or raspberries instead of strawberries
- Orange: clementines or mandarin segments instead of cantaloupe
- Yellow: pineapple or peaches instead of mangoes
- Green: green grapes instead of kiwi
- Blue and purple: none - blueberries and purple grapes are your best bet! Skittles doesn't even technically have blue so you could even leave that out unless you want the full rainbow effect.

Recipe Tips
- Use firm, ripe fruit so they chop easily and chill everything in advance.
- Serve fresh. As the fruit sits out, juices start to release and the mixture can become soupy.
- Leave the blueberries whole and halve the grapes to preserve their bright color and shape (I tried chopping the blueberries but their greenish interior wasn't as visually appealing).
- Add a simple sauce to level things up: a drizzle of maple syrup, a splash of fresh lime juice and a pinch of lime zest. A tiny pinch of salt also helps bring all the flavors to life.






This recipe makes 10-12 servings and is best enjoyed with a spoon. Every bite gives you a little bit of everything!

Ingredients
- 1 pound strawberries, hulled and diced
- 2-3 champagne mangos, peeled, diced
- 6 kiwis, peeled, ends removed, diced
- ¼ cantaloupe, diced
- 1 pint blueberries, whole
- 2 cups purple grapes (small, halved horizontally)
- Optional sauce: 2 tablespoons maple syrup, 1 lime (zested and juiced), ¼ teaspoon salt
Instructions
- Chop the fruit. For best results, slice the strawberries, cantaloupe, mango and kiwi into vertical slices before putting them through a veggie chopper. If you don't have a chopper, hand chop into small even pieces. Leave the blueberries whole and halve the grapes horizontally to preserve their color and texture.
- Combine. Just before serving, toss all the fruit together in a large bowl to create a rainbow mix.
- Add optional sauce. Drizzle maple syrup over the fruit, then add a splash of lime juice and a pinch of lime zest. Finish with a tiny pinch of salt to enhance the flavors. Stir gently to combine.
- Serve immediately. Best enjoyed cold with a spoon. Serve as is or alongside coconut whipped cream.
