Easy Vegan Chocolate Chip Cookies
The base for this recipe is my Classic Chocolate Chunk Cookies, which are vegan and gluten-free. I love these cookies because they're soft and fluffy with a slight crunch on the outside. It's the perfect, nostalgic Chocolate Chip Cookie! This recipe is also made without any crazy ingredients that would require a trip to a specialty health food store. I wanted a cookie that you could make right now with ingredients already in your pantry!
Gluten-Free Chocolate Chip Cookies
The base for these cookies is a blend of ground oats and almond flour, which make a fluffy and flavorful cookie! No exotic flours or expensive ingredients here. You can make both of these flours at home with oats and almonds! Vegan butter or coconut oil gives these cookies a decadent texture and they're sweetened with pure maple syrup for a refined sugar-free treat that's still sweet.
The Best Vegan Chocolate Chips
I use Hu Chocolate all the time! They have a really simple, clean ingredient list without unnecessary added ingredients or sugar. The Hu Chocolate Gems are perfect for these chocolate chip cookies. And, Costco now sells them in bulk!
Homemade Vanilla Almond Milk
You can buy your almond milk in the store, or you can make your own plant-based milk! I love making my own Homemade Almond Milk, especially when it's for a treat like these cookies and milk. Since I'll be dunking cookies in it for dessert, I like to add a few dates or even a little splash of maple syrup to sweeten it up and make it even creamier! An extra splash of vanilla boosts the flavors as well. I use a nut milk bag to strain the milk after it comes out of the blender, although a cheesecloth would also work just fine. You can also use an Almond Cow machine if you have one (use code ELAINE for $15 off).

Ingredients
- 1 "mini" batch of my Vegan, Gluten-Free Chocolate Chip Cookies*
- your favorite plant-based milk (I love homemade vanilla almond milk sweetened with dates)**
Instructions
- Make a batch of chocolate chip cookies but make them "mini" sized (½ tablespoon of batter and cook for 6 minutes). Allow to fully cool to room temperature for at least 20 minutes before touching them.
- Make your favorite plant-based milk using a blender and nut-milk bag or an Almond Cow machine. Chill in advance of serving.
- Pour chilled plant milk into champagne flutes and place a couple mini chocolate chip cookies in and on the rim. You can stack them on top of the rim or allow them to float in the milk. Or, serve the cookies on the side and dunk them into the milk. Whatever you prefer!
- Garnish with a sparkler if desired. Please be safe and careful if you do!
Notes
* You can follow the directions for my regular chocolate chip cookie recipe as written or make them into mini cookies as pictured. This works well when serving in champagne flutes. To make the mini cookies portion them into ½ tablespoon mounds and bake for 6 minutes until golden brown (instead of 8-10 minutes). This makes about 28 mini cookies.
** You can also use homemade cashew milk or homemade oat milk. Store-bought milk works, of course, too!
