This easy lentil taco meat has a surprisingly realistic ground meat texture thanks to one simple trick - and it's made with just 5 affordable pantry staples! It's vegan, gluten-free, dairy-free, nut-free and endlessly versatile for tacos, burrito bowls, nachos and so much more!

This is one of those recipes I make on repeat because it checks every box: easy, inexpensive, kid-friendly, freezer-friendly and incredibly versatile. It works for tacos, taco salads, burritos, burrito bowls, nachos, quesadillas, enchiladas, stuffed sweet potatoes and even taco pasta. Once you have a batch in the fridge, dinner practically makes itself!

And the texture? That's what really surprised me. The finished mixture looks remarkably similar to traditional ground taco meat. Trust me, this one is going into your regular rotation!
The Secret to That Ground Meat Texture
The secret is baking the lentils first. Fifteen minutes in a hot oven removes excess moisture and gives the lentils a slightly chewy texture before they ever hit the food processor. This one step is what prevents the mixture from turning soft or mushy like baby food. Instead, it processes into crumbles that look and act like the real thing.
The second half of the equation is freshly cooked short-grain brown rice. Short-grain rice is naturally a little sticky, so it binds everything together while keeping the recipe simple, affordable and made entirely with pantry staples. Even better, lentils and brown rice provide complementary plant proteins, so this "meat" delivers complete plant-based protein and fiber too!
Ingredient Notes

- Canned brown lentils: Canned lentils make this recipe especially convenient for busy weeknights - just rinse, drain, and pat them very dry (more on that below - it matters!). You can absolutely cook your lentils from scratch instead. My guide on how to cook lentils walks you through it and covers all of their nutritional benefits too.
- Short-grain brown rice: Freshly cooked is the way to go here. Short-grain brown rice is slightly sticky when it's fresh, which is exactly what helps the mixture hold together in the food processor.
- Taco seasoning: I use my own, which comes together in minutes with spices you already have. A store-bought blend works too. Just taste and adjust the salt.
How to Make Lentil Taco Meat
Step 1: Preheat the oven to 400°F. If you're using a ceramic-coated non-stick baking sheet such as Caraway (not sponsored), reduce the temperature to 375°F.
Step 2: Prep the lentils. Rinse and drain the lentils, then pat them very dry - and I mean very dry. The drier the lentils, the better the final texture!

Step 3: Season. Toss the lentils with the avocado oil, taco seasoning and salt until evenly coated.

Step 4: Bake. Spread the lentils in an even layer on a large nonstick baking sheet and bake for 15 minutes. They'll come out crispy - that's exactly what you want.

Step 5: Process. Transfer the baked lentils and freshly cooked rice to a 7-cup food processor. Process for 30-60 seconds, just until the mixture comes together and resembles crumbled ground taco meat. Do not blend it into a paste!

Step 6: Adjust. If the mixture seems too dry, add a very small drizzle of avocado oil and/or maple syrup and pulse again. Taste and adjust with additional taco seasoning or salt as needed. Pile it into tacos, bowls, nachos - whatever taco night calls for. Dig in!
Recipe Tips
- Pat the lentils very dry before baking. This makes a significant difference in the final texture - excess moisture is the enemy of those perfect crumbles.
- Use freshly cooked short-grain brown rice. It's slightly sticky when fresh, which is what helps the mixture hold together.
- Process just until crumbly. You want the mixture to resemble crumbled taco meat, not a paste. Keep an eye on it and stop as soon as it comes together!
- Go easy on added moisture. If it needs a little help coming together, a very small drizzle of avocado oil and/or maple syrup is all it takes.

Leftovers?
Once the mixture has fully cooled to room temperature, store it in an airtight container in the refrigerator for up to five days. It also freezes beautifully for up to three months, which makes it perfect for meal prep. Reheat it in a nonstick skillet or in the microwave, and it's ready to go all over again!
