These blueberry baked oats are mixed, baked and stored all in the exact same dish - no mixing bowls, no transferring and barely any cleanup! With less than 5 minutes of hands-on time, this cozy, blueberry muffin-inspired breakfast is my favorite way to have meal prep breakfast ready for busy mornings.

I think of this recipe as the ultimate back-to-school breakfast, but honestly? I make it all year long. It's one of those breakfasts that feels homemade without requiring much effort, and having it ready to go in the fridge makes busy mornings so much easier.
The flavor reminds me of a blueberry muffin. Between the cinnamon, maple syrup and juicy blueberries, it's soft, cozy and almost cake-like. It's filling enough for breakfast but tastes like you're eating dessert!
If you love my 1-bowl blackberry oatmeal bake, think of this as its even lower-maintenance cousin. That one uses a mixing bowl before it hits the pan - this one skips the bowl entirely. Everything happens in one dish from start to finish, and it's made with rolled oats, ground flaxseed, less sweetener and no oil. Same cozy baked oatmeal energy, even less cleanup!
The One-Dish Magic
Here's what makes this recipe different from every other baked oatmeal out there: you mix, bake and store it all in the same dish. No mixing bowls. No transferring. When breakfast is done, you pop a lid on the very dish it baked in and slide it into the fridge. That's it!
The key is using a dish that can handle all three jobs. I make mine in a rectangular Caraway baking/storage dish. It's nonstick, non-toxic and oven-safe, and it comes with a lid - which makes it absolutely perfect for a recipe like this. Stir the batter right in the dish, bake, cool, cover and refrigerate. It's seriously that easy!
The Secret to Clean Slices
I know it's tempting to dig in right away, but the secret to picture-perfect squares is to let the baked oats cool completely before slicing. It slices much more cleanly once fully cooled - warm baked oats are soft and delicate, and they need that time to fully set. Since this recipe is all about meal prep anyway, letting it cool is the easiest tip you'll ever follow!
Ingredients

- Gluten-free rolled oats: Rolled oats (not steel-cut or quick oats) give this bake its soft, hearty texture. If you don't need this recipe to be gluten-free, regular rolled oats work perfectly too.
- Unsweetened plain almond milk: Any non-dairy milk works here, so use whatever you have on hand. You can use your favorite store-bought version, or try my homemade almond milk.
- Fresh blueberries: Fresh or frozen both work! Frozen berries tend to bleed into the oats as they bake, giving everything more of a purple-blue color. It doesn't affect the taste or texture at all, just the appearance - so fresh berries will give you the prettiest result, while frozen are a perfectly acceptable option.
How to Make Blueberry Baked Oats

Step 1: Combine the dry ingredients. Right in your baking dish, stir together the rolled oats, ground flaxseed, salt, baking powder and cinnamon. No bowl needed!

Step 2: Add the wet ingredients. Pour in the almond milk and maple syrup and mix until everything is evenly combined and the oats are fully coated.

Step 3: Fold in the blueberries. Gently fold in the fresh blueberries, then scatter a few extra on top so every square gets those gorgeous jammy berries.

Step 4: Bake. Bake at 350°F for 40 minutes until the top is set and the edges are lightly golden.
Step 5: Cool completely. This is the hard part - patience! Let it cool fully in the dish so it slices into clean, beautiful squares.
Step 6: Slice and enjoy! Cut into 8 smaller meal prep squares or 6 larger servings. I love mine with a drizzle of runny almond butter on top!
Recipe Tips
- Do not slice while warm. The bake needs to cool completely to set - it slices much more cleanly once fully cooled. Trust me, it's worth the wait!
- Use the right size dish. I use an 8.5 x 6-inch (6.6-cup) dish that is 2.5 inches deep. A different size will change how thick or thin the oat layer is, which can change the baking time - so keep an eye on it if your dish is a different size.
- Make it a full meal prep breakfast. Store the squares right in the dish (lid on!) in the fridge, and breakfast is handled for several days. It's such a satisfying, filling way to start the morning without any weekday effort!

Serving Suggestions
- Almond butter drizzle: My go-to! A drizzle of runny almond butter on top takes it to the next level. You can use store-bought or my homemade raw creamy almond butter.
- Extra maple syrup: My kids love adding a little extra maple syrup on top, almost like they would with pancakes!
- Fruity toppings: It would also be delicious topped with my raspberry chia jam or my blueberry compote for double the blueberry goodness!

Health Benefits of Oats and Flaxseed
Oats and flaxseed are truly the stars of this recipe, and as a Master of Public Health (MPH) and Certified Health Education Specialist (MCHES), I love how much goodness they pack into one cozy breakfast. Oats provide fiber for lasting energy and satiety - exactly what you want from a make-ahead breakfast. Flaxseed adds healthy fats, more fiber and plant-based omega-3s. I'm always looking for ways to incorporate more of both into our diets, and this recipe makes it completely effortless!

One-Dish Blueberry Baked Oats (Vegan + Gluten-Free)
- Total Time: 45 minutes
- Yield: 6-8 1x
- Diet: Dairy-Free, Gluten-Free, Vegan
Description
These blueberry baked oats are mixed, baked and stored all in the exact same dish - no mixing bowls, no transferring and barely any cleanup! With less than 5 minutes of hands-on time, this cozy, blueberry muffin-inspired breakfast is perfect for meal prep. Vegan and gluten-free!
Ingredients
- 2 cups gluten-free rolled oats (or regular rolled oats if not gluten-free)
- ¼ cup ground flaxseed
- ½ teaspoon salt
- ½ teaspoon baking powder
- ¼ teaspoon cinnamon
- 1 ½ cups unsweetened plain almond milk (or any non-dairy milk)
- 3 tablespoons pure maple syrup
- 1 cup fresh blueberries, plus more for topping
- Almond butter, for serving (optional)
Instructions
- Preheat the oven to 350°F.
- In an 8.5 x 6-inch (6.6-cup) oven-safe baking dish, combine the rolled oats, ground flaxseed, salt, baking powder and cinnamon. Stir together.
- Add the almond milk and maple syrup. Mix until combined.
- Gently fold in the blueberries. Top with additional fresh blueberries.
- Bake for 40 minutes.
- Allow to cool completely before slicing into 8 smaller squares or 6 larger servings. Serve with a drizzle of almond butter, if desired.
Notes
- Cool completely before slicing - the bake slices much more cleanly once fully cooled.
- Fresh or frozen blueberries both work. Frozen berries will bleed slightly into the oats, giving a more purple-blue color, but the taste and texture are unaffected.
- Store covered in the refrigerator (right in the baking dish if using an oven-safe storage container).
- A different size baking dish will change the thickness of the oat layer and may change the baking time. This recipe was tested in this Caraway dish, which I love and highly recommend. It is ceramic coated and conducts heat differently than other baking dishes. If your baking dish is not ceramic-coated then increase the baking temperature to 375 degrees F.
