These falafel bowls are like a deconstructed falafel pita. The base of the bowl is mixed greens and crispy quinoa. I then topped it off with fresh veggies, olives, creamy homemade hummus and incredibly flavorful falafel. The falafel is made from chickpeas, hemp seeds, pepita seeds, oats, herbs, shallot and spices. You simply combine everything in a food processor and then form into balls to lightly pan-fry in olive oil. They are full of amazing flavor and loaded with nutrients. They have that perfect crispy crunch on the outside with a soft and satisfying inside. My family absolutely loves when I make them.
The warm, savory, crispy falafel combined with the creamy, smooth, cold hummus is beyond delicious. If you haven’t tried my creamy hummus recipe, it is totally worth the extra effort. I make it once a week or more. Ever since I started making homemade I cannot seem to go back to store-bought. It just doesn’t compare!
