Vegan Stuffed Sweet Potatoes

This is a nutritious and delicious comfort food! Perfect weeknight bite or afternoon snack.

– sweet potatoes – olive oil – salt – creamy hummus – crispy chickpeas – vegan tahini sauce – 1 avocado, – ¼ medium red onion – 2 green onions, diced

INGREDIENTS

Preheat oven. Poke holes and coat the sweet potatoes with olive oil.  Sprinkle with salt.  Place on a baking sheet.  Bake in the preheated oven for 50-55 minutes.

STEP 1

While the potatoes are baking, prepare your stuffing ingredients: hummus, crispy chickpeas, and tahini sauce.  Prep your avocado, red onion, and green onions.

STEP 2

Halve the cooked sweet potatoes lengthwise.  Use a fork to create a well in the center.  Add fillings. Garnish with a drizzle of tahini sauce, avocado, red onion, and green onion.

STEP 3

Enjoy immediately while sweet potatoes are hot.  The sweet potato skin should be nicely seasoned and crunchy.
