Description
This easy homemade pumpkin milk is the perfect way to make vegan fall drinks. You can serve it hot or iced, use it as a base for a vegan pumpkin spice latte or pour it over oatmeal or granola.
Ingredients
Units
Scale
- 2 cups unsweetened, plain almond milk (or any non-dairy milk)
- 1/4 cup pumpkin purée
- 2 tablespoons pure maple syrup
- 1 teaspoon pure vanilla extract
- 3/4 teaspoon pumpkin pie spice
- pinch of salt
- ice for serving
- optional garnish: homemade vegan whipped cream and a dusting of cinnamon or pumpkin pie spice
Instructions
- Add all ingredients to a high speed blender and blend on the highest speed for 20-30 seconds until fully incorporated. Alternatively, froth with a hand frother.
- Pour into a glass filled with ice cubes and enjoy immediately. Or transfer to an airtight container (such as a mason jar) and store refrigerated for up to five days. Use in cereal/granola, oatmeal, coffee or any recipe that calls for milk that you want to give a pumpkin spiced flavor! You can also warm it up and serve hot as a coffee-free PSL! I love it poured over lots of ice with vegan whipped cream and a light dusting of ground cinnamon.
