Ingredients
- 12 pitted soft Medjool dates
- 2 tablespoons runny tahini
- 2 tablespoons quick-cooking oats (I use certified gluten-free)
- 2 tablespoons cocoa powder
- 2 tablespoons vegan chocolate chips
- 1 tablespoon raw white sesame seeds
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon fine salt
Instructions
- Add all ingredients to a 7-cup food processor. Process until the mixture is well combined, sticky, and forms a soft dough. Scrape down the sides as needed. The dough should easily hold together when pressed.
- Scoop out ½ tablespoon at a time and use your fingers to gently shape the dough into small rectangles (or any shape you wish).
- Enjoy immediately or place the bites on a parchment-lined baking sheet to chill and firm up overnight (recommended for best texture).
