This cool and refreshing cucumber salad boasts incredible flavor using just a handful of simple ingredients. Just toss everything together and you're good to go!


Units Scale
  • 3 Persian cucumbers
  • 1/2 small red onion
  • 3 tablespoons toasted sesame seeds
  • 1 tablespoon good quality olive oil
  • 1/2 teaspoon toasted sesame oil (or more to taste)
  • 1/2 small lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • drizzle of tahini
  • drizzle of date syrup
  • 1/4 teaspoon salt (or more to taste)


  1. Thinly slice the fresh cucumbers and onion. I highly recommend using a mandoline, but if not use a sharp knife to cut them into even slices. I set the mandoline to level 2 for the cucumbers and level 1 for the onion.
  2. Toss all ingredients in a small mixing bowl. Taste and adjust flavors as desired. I prefer a heavy drizzle of the tahini and date syrup.
  3. Serve immediately while cold.


Chill the cucumbers in advance to ensure the salad is cold once prepared.

For an added protein boost, sprinkle in hemp seeds.
