Description
This cool and refreshing cucumber salad boasts incredible flavor using just a handful of simple ingredients. Just toss everything together and you're good to go!

- 1 lb. or 8 mini Persian cucumbers, ends removed
- 1/4 small red onion, ends removed, peeled
- 1/4 cup runny tahini
- 1 large juicy lime, juiced (~3 tablespoons)
- 2 tablespoons good quality extra virgin olive oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon toasted sesame seeds
- 2 teaspoons date syrup
- 3/4 teaspoon salt
- optional: 1/4 cup fresh cilantro, chopped
Instructions
- Thinly slice the fresh cucumbers and onion. I highly recommend using a mandoline, but if not use a sharp knife to cut them into even slices. I set the mandoline to level 2 for the cucumbers and level 1 for the onion.
- Toss all ingredients in a small mixing bowl. Taste and adjust flavors as desired.
- Serve immediately while cold.
Notes
Pro Tip: Chill the cucumbers in advance to ensure the salad is cold once prepared.
For an added protein boost, sprinkle in hemp seeds.
Store any leftovers in an airtight container for up to 3 days. The salad holds up well, but it will continue to get soggier the longer it sits. Therefore, I recommend enjoying immediately for best results.
