Healthier Homemade Heavenly Hunks (No Refined Sugar)

Description

If your family is obsessed with Heavenly Hunks, you’re not alone! Those soft, chewy chocolate chip bites are seriously hard to resist. This homemade no-bake version captures everything you love about the original but with cleaner ingredients, no refined sugar and a little extra nutrition. They’re quick to make, freezer-friendly, and perfect for school lunches, after-school snacks or even a healthy dessert.


Ingredients

  • 3 cups gluten-free rolled oats
  • 1 cup finely shredded coconut
  • 1/3 cup unsweetened/unflavored protein powder (I use this unsweetened, unflavored almond protein powder)
  • 1/2 teaspoon fine salt
  • 1/2 cup pure maple syrup
  • 1/2 cup coconut oil, softened (not melted)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup mini chocolate chips (I use Enjoy Life brand)

Instructions

  1. Prep the oats. Add oats to a 7-cup food processor and process for 30 seconds until coarsely broken down.
  2. Add dry ingredients. Add the coconut, protein powder and salt. Pulse 5 times.
  3. Add wet ingredients. Pour in the maple syrup, coconut oil and vanilla. Process for 10 seconds or until well incorporated.
  4. Fold in the chocolate chips. Make sure the coconut oil isn’t warm enough to melt the chocolate, then stir or fold them in gently.
  5. Transfer to pan. Line a 9x4 loaf pan with parchment paper or use a silicone loaf pan. Spread the mixture into the pan and gently press it down with a spatula (no need to pack it firmly).
  6. Freeze. Place in the freezer for at least 2 hours. For clean cuts, freeze for 4–6 hours or overnight. If frozen overnight, let it thaw slightly before slicing.
  7. Slice and enjoy. Cut into 3 columns and 6–7 rows.

Notes

Store in the refrigerator for up to 2 weeks or freezer for up to 3 months.
