Description

If you love the chewy, naturally sweet goodness of dates and the crisp, nutty texture of the Dubai chocolate bar, this recipe is for you! Here I've combined two viral TikTok trends - date bark and the Dubai chocolate bar - to create a vegan and gluten-free treat that's perfect for anytime you want a delicious, no-fuss dessert.


Ingredients

  • 12 large soft-pitted Medjool dates
  • 1 cup unsweetened coconut shreds (or unsweetened shredded coconut)
  • 2 tablespoons avocado oil
  • 1/4 cup pistachio cream (store-bought or homemade in 5 minutes)
  • 2 tablespoons runny tahini
  • pinch of salt
  • 3/4 cup vegan dark chocolate chips (I recommend Hu gems)
  • Garnishes: roasted salted pistachios, melted vegan white chocolate drizzle and flaky sea salt

Instructions

  1. Flatten the dates. Open the dates and arrange slightly overlapping in a 3x4 pattern on a sheet pan lined with parchment paper. Place another sheet of parchment paper overtop and flatten them with a rolling pin or the side of a glass mason jar so that they stick together and create a thin, cohesive layer (see photos above).
  2. Toast the coconut "phyllo dough." In a pan over low heat, toast shredded coconut with avocado oil until golden brown for 10 minutes, stirring often to prevent burning. Take it off the heat and let it cool slightly for a couple minutes.
  3. Make the filling. Stir the toasted coconut into the pistachio cream along with tahini and a pinch of salt. 
  4. Spread the mixture evenly over the flattened dates. Make sure to reach the edges with no gaps.
  5. Freeze and add chocolate. Freeze briefly to set (at least 10 minutes), then pour melted dark chocolate over the top, spreading it into one even layer covering the entire dessert.
  6. Garnish and freeze again. Drizzle with melted vegan white chocolate (for that signature look), sprinkle chopped pistachios (for more crunch) and finish with flaky sea salt. Freeze again until firm (at least 5 minutes).
  7. Serve! Chop into pieces using a knife or break it apart with your hands!
