Chipotle Guacamole (Copycat Recipe)

Description

This six-ingredient, simple recipe tastes exactly like the Chipotle guacamole we all know and love. The secret is to leave out the garlic, black pepper and tomatoes found in traditional guacamole recipes. The other secret is to use a potato masher to easily get a perfectly creamy texture (with just a bit of chunkiness too). You can adjust the seasonings and ingredients to customize it to your liking.


Ingredients

  • 2 perfectly ripe avocados
  • 2 teaspoons fresh lime juice (I used the juice of one juicy lime)
  • 1/4 teaspoon kosher salt
  • 1/4 cup red onion, finely diced
  • 1/2 jalapeno, finely diced with some seeds included (the more seeds the spicier it will be)
  • 2 tablespoons fresh cilantro (long stems removed), finely chopped

Instructions

  1. Mash the avocados. Halve the avocados, remove the pits and scoop out the flesh. Place the avocados, lime juice and salt in a medium mixing bowl and mash with a potato masher until smooth and creamy (with a few avocado chunks remaining if desired).
  2. Add the rest of the ingredients. Finely dice the red onion, jalapeño and cilantro and add them to the bowl. I recommend a fine dice similar to how Chipotle does it.
  3. Stir and season to taste. Stir until everything is mixed together. Taste and adjust seasonings as needed. Add more jalapeño to make it spicier. Add more salt for more saltiness. You may also like to add more lime juice or cilantro depending on your preference.
  4. Serve! Enjoy in burrito bowls, taco salads or any other Mexican-inspired dish. Or, simply use as a dip for fresh veggies or chips. Chipotle seasons their tortilla chips with fresh lime juice and salt.

I like to add lime zest too, although the original recipe doesn't call for this.

I tend to add more salt, red onion and cilantro too for added flavor. Taste and adjust the flavors to your preference. With these main ingredients you can't go wrong! Here is my favorite version which is similar to the above copycat Chitpotle version but with different measurements:

  • 1.5 teaspoons fine salt
  • 3/4 cup red onion, finely diced (from 1/2 large red onion)
  • 1/2 jalapeno, finely diced with some seeds included (the more seeds the spicier it will be)
  • 1 cup fresh cilantro (long stems removed), finely chopped
