Vegan & Gluten-Free Father's Day Recipes

INGREDIENTS

– Head of cauliflower – Filtered water – Arrowroot powder – Panko breadcrumbs – Vegan butter and/or avocado oil spray – Vegan paleo buffalo sauce – Homemade vegan ranch dip

STEP 1

Preheat oven to 425 degrees Fahrenheit and spray a cast iron skillet very generously with avocado oil. Pour the breadcrumbs into a wide bowl and set aside.

STEP 2

In another bowl, whisk together water and arrowroot powder until smooth.  It should be thick and sticky like glue.  This is your batter.

STEP 3

Dip one at a time, first into the water/arrowroot powder mixture and second into the panko breadcrumb mixture until fully coated on all sides with breadcrumbs.

STEP 4

Spray the breaded cauliflower wings very generously with avocado oil spray. Bake for 15 minutes on the middle rack.

STEP 5

Remove from oven and toss the cauliflower wings well in the buffalo sauce to fully coat each piece. Once fully coated in the buffalo sauce, bake another 5 minutes.

STEP 6

Flip each floret 180 degrees. Drizzle the rest of the melted butter or spray more avocado oil. Bake another 5 minutes until golden brown and crispy.

STEP 7

Serve immediately while hot alongside carrot and celery sticks with chilled vegan ranch dressing for dipping.
