Top it with your veggies of choice, or leave it simple and classic!
– Zucchini – Marinara sauce – Vegan mozzarella cheese – Extra virgin olive oil – Salt – Pepper
Slice the zucchini into ½-inch rounds. Place them on the two lined baking sheets, should not be touching.
Add marinara or pizza sauce overtop each zucchini round. Try and keep the sauce in the center.
Add cheese in the center. Drizzle oil overtop the cheese. Sprinkle lightly with salt and pepper.
