This is the cookie cake to end all cookie cakes! It is SO good you guys! It is like a giant soft-baked chocolate chip cookie that you can frost, slice up and serve like a piece of cake. I don’t know if life gets any better than that! It is everything we all love about chocolate chip cookies in cake form.
I have been trying to master the perfect cookie cake for so long now. I’ve never been fully satisfied with any cookie cake recipe I’ve ever followed. They are always too crumbly, hard, thin or just not good! And this year for the girls’ birthdays they both asked for cookie cakes for their birthday dessert. Riley’s birthday falls on Passover and she is vegan, hence this grain-free cake was born.
The cake is perfectly studded with chocolate chips throughout. I reserve some for topping off the cake just before baking once the dough is pressed into the pan. This helps with the overall presentation. I also sometimes like to use a combination of mini and regular sized chocolate chips. It is the best of both worlds and ensures every bite is chocolate chip perfection.
