Holiday Snack Board Ideas
With springtime here, I knew I had to create a St. Patrick's Day Snack Board to incorporate all things rainbow, shamrock, and green. If you follow me on Instagram then you know I love to play around and get creative with food as art. My kids love it as much as I do! It is so fun to make colorful, festive, themed treats. Last Halloween I made the kids this spooky dinner before we went trick or treating, and I've done Fun with Food posts for Halloween, at Christmas time, and for Hanukkah snacks.
This concept is similar to my Chocolate Dessert Board: don't overthink it! Just start gathering your favorite green ingredients, fill up the board, and remember that it doesn't have to be perfect. In this St. Patrick's Day Snack Board I have a leprechaun hat, two shamrocks and a rainbow with a pot of gold. Can you spot them all?! My kids loved pointing out the different shapes.
St. Patrick's Day Snack Board Tips
- Green grapes and sliced kiwis were my major filler where I had gaps. This works out well since they're both crowd pleasers and everyone loves sweet fruit!
- I started with the green bell pepper shamrock, which was really quick to cut out, and leprechaun hats made from cucumber (or green bell pepper), yellow bell pepper, and vegan cheese (or more yellow bell pepper). They might be my favorite part of this St. Patrick's Day Snack Board!
- Heart vegetable cutters helped to make the open-faced green hummus shamrock sandwich! Look for a spinach artichoke hummus at the store or make my Quick and Easy Creamy Hummus (I love chickpeas!) and add spinach to make it green and a little extra water.
- I used half of an avocado for the pot and filled it with yellow dye-free vegan, dark chocolate candy gems for the gold. I love how it turned out!
- The rainbow can be made from almost any fruits or vegetables. I dug around in my fridge and found strawberries/raspberries, carrots/clementines, yellow bell peppers/pineapple, honeydew/sweet peas, blueberries and red grapes. My kids loved stacking one of each on their plate to make a rainbow!
- To add some salty crunch, I used the green Pea Crisps, which are another kid favorite in our house! Green Veggie Straws also work.

Ingredients
Rainbow + Pot of Gold (center)
- Red: raspberries or strawberries or cherries
- Orange: orange bell peppers, baby carrots, cantaloupe or clementine or orange segments
- Yellow: yellow bell pepper, yellow baby carrots, pineapple, mango
- Green: sugar snap peas, peas, kiwi, honeydew or green apple
- Blue: blueberries
- Purple: Purple grapes
- Avocado half, pit removed and filled with dye-free yellow dark chocolate candy gems or mango chunks
- Clouds: mini vegan marshmallows or banana slices
Leprechaun hats:
- English cucumber or green bell pepper
- Yellow bell pepper (buckle)
- Vegan white cheese slice or more yellow bell pepper
Large Shamrock (upper right corner):
- Green bell pepper
Open-Faced Green Hummus Shamrock Sandwich (bottom middle)
- Sandwich bread
- Green Hummus or Guacamole
Snack Board Gap Fillers:
- Green grapes
- Kiwi
- Sugar snap peas
- Pea crisps
- Cucumber
- Green vegan, dye-free dark chocolate candy gems
- Other green food ideas: green salsa, guacamole, green tahini sauce, pepita seeds, pesto, pistachios, kale chips, green olives, broccoli, celery, peas, green apple, pears, honeydew, mint leaves for garnish
Instructions
- Arrange the rainbow on a cutting board or serving tray and place the avocado half as the "pot of gold" at the end of the rainbow. Where the pit was, fill it with the yellow chocolate candy or mango..
- Make the green bell pepper shamrock, shamrock green hummus open faced sandwich and leprechaun hats. Place around the rainbow and clouds where you have room.
- Add a mini bowl of the leftover green hummus (or use guacamole or green tahini sauce). Fill the board with smaller items: kiwi, grapes, cucumber slices, sugar snap peas, pea crisps etc Be sure to fill in any gaps or holes you have to complete the overall look.
