Why I Love These Double Chocolate Chip Cookies
The base for these Fudgy Doble Chocolate Chip Cookies is a blend of almond and oat flour, which gives them both plant-based protein and filling substance. They're naturally sweetened with pure maple as well as Hu brand chocolate chips. It's a chocolate dessert, but they're also free of refined sugar! Most importantly, they're absolutely delicious. It's a win for the kids AND for mom.

Fudgy Double Chocolate Chip Cookies

Description
These easy Fudgy Double Chocolate Chip Cookies are soft, sweet and chocolatey! They are vegan, gluten-free, dairy-free and refined sugar-free.
Ingredients
- ½ cup almond flour
- ¾ cup oat flour
- ⅓ cup unsweetened cocoa powder
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ¼ cup + 1 tablespoon maple syrup
- ¼ cup + 1 tablespoon melted coconut oil
- 1 teaspoon vanilla extract
- ½ cup mini vegan dark chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit and line a half sheet baking sheet with parchment paper.
- In a large mixing bowl, place all dry ingredients (almond flour, oat flour, cocoa powder, salt and baking soda - not chocolate chips yet). Stir until well combined.
- Add all wet ingredients (maple syrup, melted coconut oil and vanilla extract) to the dry ingredients in the mixing bowl and stir until well combined.
- Add the vegan chocolate chips and stir until evenly distributed.
- Use a cookie scoop to create 12 balls of cookie dough. Place them on the baking sheet in three rows.
- Bake for 8 minutes.
- Allow them to rest on the baking sheet for 10 minutes.
- Move cookies to a wire cooling rack to fully cool (about 7 minutes).
- Enjoy!

I just made these. I followed the recipe exactly but the dough was runny, so I let it sit for a few minutes. Then ended up adding a couple tablespoons more of the almond flour. Baked the first batch and they spread too much and don't look the your fluffy ones in the pictures. This seems to be the same problem I have baking GF cookies. Any ideas on what the issue could be? All my ingredients are fresh including the baking soda. I would love to figure out what the problem is here. Next batch I'm making them small to allow for some spread. But THEY TASTE DELICIOUS! Just wish they looked better.

It is hard to say despite all the detail you provided.
