    Memorize this recipe, because these Chocolate Coated Almond Butter Crunch Balls will quickly become a favorite! This is a vegan, gluten-free, and refined sugar-free treat that's nutritious enough for mid-day snacking and delicious enough for a late-night dessert. You'll be hooked!

    Almond Butter Crunch Balls

    I can honestly say that I enjoy every recipe I've posted on my site and, until recently, it would be impossible to choose a favorite...but then all of that changed. What happened?! I made these Chocolate Covered Almond Butter Crunch Balls and immediately thought, "This might be my favorite thing I've made...ever!" Seriously. These little bites have everything I love in a snack or treat! A bit of crunch, filling nutrition and plant-based protein, perfectly balanced flavors, and of course...chocolate. It's all right here in one delicious, easy-to-make bite! Fair warning: you may want to double or triple this recipe. They're going to go fast!

    Ingredients in Chocolate Coated Almond Butter Crunch Balls

    Open the pantry and let's gather some ingredients! This cast of characters are all pantry staples in my house, which only makes this recipe easier to make when I'm craving a nutty, chocolatey treat.

    • Almond Butter - Creamy almond butter is perfect for this recipe, and I like to make sure it's nice and runny so it evenly incorporates and holds each Almond Butter Crunch Ball together.
    • Pure Maple Syrup - I rely on pure maple in so many of my recipes! This is different from table syrup and is made with just one ingredient: the pure sap from maple trees.
    • Salt and Vanilla - I use just a pinch (about ¼ teaspoon) of each, but it perfectly balances the flavors and makes these bites taste like the perfect treat.
    • Almond Flour - I buy superfine, blanched almond flour, not almond meal.
    • Brown Rice Crisp Cereal - Check your ingredients to make sure your cereal is unsweetened, or maybe lightly sweetened with coconut sugar. This keeps the recipe free of refined sugar, and the cereal adds a satisfying crunch in every bite!
    • Chocolate Chips - I use Hu brand, which melt beautifully on the stovetop or in the microwave!

    All About Almond Butter

    The glue that holds these Crunch Balls together is almond butter, and I use almond flour to add substance. Lucky for us, almonds are both delicious and really nutritious. Almonds are low in carbohydrates and high in protein.  They also offer a good source of fiber, healthy fats, vitamin E and magnesium as well as providing iron and calcium. My go-to almond butter is the raw, creamy Trader Joe's version, which is also one of the more affordable ones I've seen. I prefer raw to roasted almond butter (I just think it has a better flavor!), which makes it super easy to make your own if you have almonds and a food processor.

    Description

    This vegan and gluten-free treat is about to become your favorite! Chocolate Coated Almond Butter Crunch Balls are the perfect bite!


    Ingredients

    Units Scale
    • ½ cup raw creamy almond butter (unsalted and unsweetened), runny works best here
    • ¼ cup pure maple syrup
    • ¼ teaspoon vanilla extract
    • ¼ teaspoon fine salt
    • 1 cup super fine blanched almond flour (not almond meal)
    • ½ cup brown rice crisp cereal, unsweetened or lightly sweetened with coconut sugar
    • 1 cup vegan, refined sugar-free chocolate chips (I use Hu brand), melted on the stovetop or microwave
    • optional: flaky sea salt for garnish

    Instructions

    1. Add almond butter, maple syrup, vanilla and salt to a medium sized mixing bowl.  Use a spoon to stir together until well combined.
    2. Add the almond flour and stir again.  Fold in the brown rice crisp cereal and mix until evenly distributed.
    3. Use a 1.5 tablespoon cookie scoop to portion out the batter into 12 scoops.  Place each scoop on a parchment paper lined baking sheet.  Use your hands to roll each scoop into a ball.  Freeze for at least 20 minutes.
    4. Once frozen dip each ball into the melted chocolate.  You can do this using two forks or a chocolate dipping toolset like this.  Allow excess chocolate to drop off before placing each ball back onto the parchment lined baking sheet.  Add flaky sea salt if desired (just a tiny pinch on each ball before the chocolate sets).  Freeze again for at least 10 minutes to allow the chocolate to fully set.  Enjoy straight from the freezer.
    5. Once frozen you can consolidate the balls into an airtight container and store in your freezer for up to three months.
