I’ve been on a ‘sneaking in veggies’ kick lately. I’m trying to increase my vegetable intake whenever and wherever possible, especially since while pregnant vegetables are not always the most appetizing of foods. This chocolate shake is such a sneaky way to get some cauliflower into your diet. Stay with me here. If you steam the cauliflower and freeze it you can actually toss it into smoothies for a super creamy, silky effect. And no cauliflower taste – promise. This adds dietary fiber, folate and vitamin C to your breakfast routine without even trying. And did you know cauliflower is low in calories? Just 15 calories per serving. Soon I’m going to try adding cauliflower to homemade popsicles and see if my kids notice. They definitely do not notice when I add it to this chocolate shake.
The recipe details at the end of this post explain exactly how to prepare the frozen cauliflower for your shake. It takes a little forethought but once you do it you can use throughout the week.
When selecting your cauliflower at the supermarket you want to make sure it is white or creamy white, firm/compact and heavy for its size. Avoid speckling, brown patches or any discoloration when selecting your cauliflower. Cauliflower can last in the vegetable drawer of your refrigerator for up to one week. Store it with the stem-side up to prevent moisture from collecting on it.
In addition to the cauliflower, this chocolate shake uses Barlean’s vegan, gluten-free and soy-free Greens Powder (Chocolate Silk Flavor). Not only does it provide a delicious chocolate flavor to the shake without any added sugars but it offers a concentration of greens, fruits and vegetables. The powder is made from whole foods and with fair-trade, antioxidant-rich cocoa. It is entirely non-GMO. I have been adding 2-3 scoops to my smoothies in the morning and loving the rich and sweet chocolate flavor it adds. You really do not taste any vegetables. It isn’t gritty like a lot of smoothie powders can be. I was really impressed with the flavor and thrilled that my kids love it too.

- 1 cup frozen riced cauliflower*
- 4 non-dairy milk ice cubes (I use unsweetened, plain almond milk)
- 3 scoops Barlean's Chocolate Silk Greens**
- 2 tablespoons raw almond butter (or any nut or seed butter)
- 1 cup unsweetened, plain or vanilla non-dairy milk (I use almond milk)
- Place all ingredients in blender in the order listed. Blend on high speed for 1 minute. Taste and add more frozen cauliflower and/or almond milk ice cubes for a thicker drink.
- Pour into two glasses and enjoy immediately.
** If you do not have Barlean's Greens Powder Chocolate Silk Flavor you can substitute the following for the 3 scoops called for in the recipe: 4 dates, 2 tablespoons unsweetened cocoa powder or cacao powder, pinch/sprinkle of ground cinnamon
